We are honored and excited to the reintroduction of Champagne Georges Laval to the LP portfolio!
Hidden behind an unassuming door in Cumières, Champagne Georges Laval is one of the region’s true under-the-radar gems, known mostly to dedicated Champagne lovers. The Laval family has farmed vines here for four generations, with Georges Laval beginning estate bottling in 1971. His son Vincent joined in 1991 and has led the cellar since 1996, continuing the domaine’s intensely hands-on, quality-driven approach.
The estate spans just 2.5 hectares, with two hectares located in the premier cru village of Cumières across seven parcels, and a small holding in Chambrecy. The vines average over 30 years of age, with some exceeding 70, contributing depth and character to the wines. Since 1971, the Lavals have practiced certified organic viticulture, focusing on soil health through composting, cover crops, and careful vineyard management. Over time, they’ve worked to consolidate parcels to better support organic farming.
In the cellar, Laval emphasizes precision and minimal intervention. Grapes are pressed in a traditional small-format Coquard press, fermented in barrel with indigenous yeasts, and typically bottled about ten months after harvest. The wines are neither fined, filtered, nor cold-stabilized, and sulfur use is kept to an absolute minimum—resulting in finished wines with notably low total sulfur, often under 20 mg/L. Harvesting at full ripeness and rarely chaptalizing, the Lavals produce Champagnes of purity, energy, and distinct terroir expression.

You may have already noticed her labels on the shelves of your favorite wine shops or featured on your neighborhood restaurants’ menu, but allow us to introduce our newest French producer partner, Sophie Schaal!
Nestled in the foothills of the Vosges Mountains, Sophie’s work blends technical precision with a deeply personal commitment to place and sustainability. Originally from Burgundy, she trained in Dijon, earning a national diploma in oenology before establishing herself in Alsace with her husband Julien in the village of Hunawihr, Alsace. Her background in both classical French wine education and hands-on regional experience informs a style that is meticulous yet expressive, rooted in Alsace’s diverse soils and cool climate.
In the vineyards, Sophie practices organic farming, driven by a philosophy of stewardship and long-term environmental responsibility. She avoids synthetic chemicals and pesticides, focusing instead on healthy soils, biodiversity, and vine balance. Alsace’s geology is complex ranging from limestone and clay to granite and schist which is central to her approach. Sophie and her team work parcel by parcel to allow each site to express its own identity through the grape varieties best suited to it, including Riesling, Pinot Gris, Gewurtztraminer, and Pinot Noir.
Her cellar work reflects a minimalist, terroir-forward mindset. Grapes are hand-harvested, gently pressed—often as whole clusters—and fermented slowly to preserve freshness and aromatic precision. Fermentations rely on native yeasts, and élevage is carefully managed, often in neutral French oak, with the goal of enhancing texture and balance without obscuring varietal or site character. Interventions are kept to a minimum, with close attention paid to timing, lees contact, and clarity.
Sophie’s wines are defined by purity, structure, and a clear sense of origin. They reflect a winemaker who values technical rigor as much as restraint, producing wines that are expressive rather than demonstrative, and firmly grounded in the landscapes and traditions of Alsace.
