Pho! With a Vegan low FODMAP twist.
It can be done! Using the leaves and greens of celery, leek, spring onion, kale, herbs, dried shiitake mushrooms, soy sauce, rice wine vinegar, dash of sugar or syrup of choosing and garlic infused oil. Chuck in some star anise, cinnamon, cloves and simmer away! 👌
October 2024, Another amazing experience we had in Nepal was @sevenwomen cooking class! Hands down the best meal we had on our trip, it was so fresh, tasty and satisfying. Most foods prepared were vegan friendly, all was vegetarian, which was a huge bonus for me. Fun fact, I expected to struggle with eating in Nepal, however most foods in Nepal were conveniently and incidentally vegan. Thank you @mikaylaeleyne for the recommendation!

Noodle soup! 20 minute gourmet lunch, comfort food to the max, vegan, heart warming decadent, healthy, all the things! TVP mince, dried mixed mushrooms, miso paste, rice noodles, stock, garlic and ginger with a hint of soy sauce, chilli oil and sesame seed oil and rice wine vinegar to taste!
Been loving a quick cashew cream cheese sauce lately! Hand full of raw cashews, covered in boiling water, soak for a few mins and blitz! Flavour how you like, my go too is nutritional yeast, garlic powder and onion powder, salt and pepper, and a dash of lemon juice. So simple. It honestly takes no longer than cooking pasta. @masterchefau in the background cheering me along!
