Ksenija Hotić @khzen fled a genocide as a child. She rebuilt her life in a foreign country, but she carried her homeland with her in her recipes.
When her family fled Bosnia in 1992, Ksenija carried with her the smell of her grandmother’s kitchen, and the taste of a home she didn’t know if she’d ever see again. Now an award-winning photographer, food stylist, and writer, she has spent years documenting what food really is: nourishment but also identity, grief, survival, and belonging.
This is the first episode of Schnitzel & Stories where we, as hosts, couldn’t hold back our tears. Ksenija is a captivating storyteller who explains what war really means. She takes us inside the cookbook she’s been writing in Sarajevo and shares what it means to cook your way back to yourself.

Adiyaman welcomed us with open hearts albeit the most difficult earthquakes when a group of us were invites to present at a culinary gathering supported by the Kahta Sub-province Governor’s Office and the Silk Road Development Agency of Adiyaman in 2023. We learned from each other, and gathered here in this special part of this world of ours from Canada, Germany, Singapore, Hawaii and other places.
We are grateful to the Kirmizi Publishers @kirmiziyayin for a memorable book we now have to learn more from. It is titled Imagining Sustainability and Food at Nemrut Mountain. The book features essays and interviews about shaping a more resilient future. A special thanks to our editors Ismail Ertürk and @zaferyenal_ and to @arlenestein and @nihatozdal@nemrutgastronomy@terroirsymposium for organizing this invaluable experience.
We listened, we shared, laughed and cried, felt and understood each other beyond the spoken languages. And then we cooked a shared meal by the water and let time make its mark. Beyond grateful to have been invited here and to have shared so much together.

The journey to discovering Tunisian food last year while there has left my tastebuds wanting to cook it more often.
The highlight of the food was the use of the various olive oils. I was fortunate to work with Damya Olive Oil for some weeks, and learned a whole lot about its growing and harvesting practices. The olive oil is sustainably grown and harvested, through sustainable and regenerative farming methods, actually leaving the land better than it was found.
In particular, it was the Chemlali olives for me that captivated me, native to Tunisia in North Africa.
I couldn’t easily decide which dish to repeat once I got my Damya bottles from California, and it eventually became to be the simple but unforgettable carrots with garlic, olives, spices and lemon.
Damya olive oil is pure, fresh, never blended and farmed by women for many generations. Their crop rotations include Almond, Prickly Pear, Beans, Tomatoes and Cucumbers, creating the award winning taste that cannot be replaced.
