How to make thousand island dressing ⬇️ Sign up for my newsletter to keep up to date with exclusive recipes and menu planning! Comment “SUBSTACK” and I’ll send you a link to your DMs to join my community! Thousand Island dressing has a pretty bad rap, and I get it. I used to hate it too, until I started making it from scratch. I was working salad station at a restaurant when we had a wedge with this dressing and it completely changed my outlook on it. When you make the mayo from scratch for this dressing, it is a game changer. It is also incredibly easy to make. All you need is a blender and 10 minutes. Why you should rest your meats before slicing into them 🥩 Sign up for my newsletter to keep up to date with exclusive recipes and menu planning! Comment “SUBSTACK” and I’ll send you a link to your DMs to join my community! I always get asked if it is really that important to rest meat after cooking it, and my answer is always HELL YES! Resting meat is when you let your meat sit off heat after done cooking for a certain amount of time before slicing into it. This is important because when meat is cooking, the liquids in the meat are moving around and are displaced. When they are just done being on the heat, the juices are still moving around, so if you immediately slice into it, the juices will flow out onto your plate, drying out the meat. In this video you can see the untested steak that was immediately sliced into lost a TON of moisture and juices. While the steak rested for 10 minutes, kept most of it. I go into greater detail on my latest Substack! Comment “SUBSTACK” and I’ll send you a link. #cooking #steak #restingmeat #ribeye

How to break down a rotisserie chicken 🐓 Sign up for my newsletter to keep up to date with exclusive recipes and menu planning! Comment “SUBSTACK” and I’ll send you a link to your DMs to join my community! When you don’t feel like just ripping apart a rotisserie chicken with your hands, we all do it 😜, here is how you easily break it ⬇️ 1. Pull the legs and thighs away from the body. With a chefs knife or boning knife, slice into this seam and through the joint. A lot of the time you can just pop it out of the joint with your hands too! 2. Remove the wings by popping them out at the joints. 3. For the breast slice to the left or right of the breast bone. Work your way along the rib cage, using that as a guide to get as much meat off as possible. Do this until you get to the joint attaching it and slice through the joint. Do this on the other side. 4. Freeze or Use the bones to make stock! Let me know if you tried breaking down a chicken this way and how it worked for you!
