This weekends cook on the @leviathanpits dreadnought.
Early start Saturday morning with Brisket, monster beef ribs, pork belly and a pork shoulder.
All seasoned with some of the best rubs in the business @jim.slimms.bbq BBQ KISS keeping it as Texas inspired BBQ as we can.
Some of the belly was cooled down cut into bites then smoked again with an Apricot glaze over them. All of Saturdays food was held overnight.
Sundays cook is always as important but a little easier.
