Yesterday, Bali was silent.
Nyepi, also known as Bali’s Day of Silence, marks the Balinese Hindu New Year — a sacred day dedicated to stillness, reflection, and renewal. Across the island, everything pauses. No flights, no traffic, no lights. Just a full day to reset.
In the days leading up to Nyepi, purification rituals take place at temples like Goa Lawah in Klungkung, where we were guided by Bli Komang, a pemangku (Balinese Hindu priest). Through prayer, offerings, and holy water, we experienced a small part of this deeply rooted tradition.
And then, silence.
As we build Junsei in Sanur, Bali, these moments shape how we move with intention, respect, and awareness of where we are.
Junsei Bali is a new Japanese izakaya and yakitori restaurant opening in Sanur, in Jl. Danau Tamblingan, bringing together charcoal-grilled skewers, Japanese cuisine, and a listening bar experience.

Two nights at Soho House Mumbai, bringing Junsei’s fire-led Japanese cooking into the House. The calm before service, Aman briefing the team, and the plates doing the talking

For the month of May, we’ll be pouring a selection of cocktails built around rum, shochu, sake, citrus, spice, and Japanese ingredients — designed to pair alongside binchōtan-fired yakitori, vinyl, and late evenings in Marylebone.

A month shaped around sake, fire and sound.
From the first evening in March to the final service in April, our collaboration with @_erikahaigh of @drinkmaisake brought a focused exploration of Japanese sake into the Junsei space.
Each night moved through a progression of pure pours, from clean and refined to deeper, more expressive styles, paired with yakitori grilled over binchōtan and seasonal dishes from the kitchen. Guided by Erika alongside @rizwan_k_98 , the experience was built on conversation, craft and quiet precision.
Set within a low-lit listening bar in Marylebone, with vinyl carrying the room through the evening, the series became something more than a single event. A rhythm that unfolded over time.
Alongside the service, Erika and Rizwan joined Hoxton Radio to speak on The Art of Sake, sharing insights into the culture, process and character behind each pour.

Junsei welcomes Tom Wilson, co-founder of Kanpai, the UK’s first sake brewery, for a special evening of sake and charcoal-fired dining.
A curated tasting of five Kanpai sakes will be presented throughout the night, ranging from bright, lively styles to deeper, more expressive pours.
Including MIRU — Bodaimoto Junmai Ginjo, brewed using an ancient method, with notes of banana bread, persimmon and honey.
Head Chef Zach has created a pairing menu of seasonal otsumami and binchōtan-grilled dishes, designed to complement each pour with precision.
The evening will be guided by Tom alongside Junsei’s Rizwan Khan, bringing a more interactive, back-and-forth tasting experience to the table.
