R&D from the lab 🧪🍄
This mushroom tzatziki tartine started with a simple question:
what happens when fungus and fermentarion inspires the plate?
Oyster mushrooms led the way — their texture, their folds, their almost oceanic softness. Followed by fermentation of korean red pepper and sourdough — featured in a gochujang sesame sourdough bread.
So we built around them:
charred mushrooms, cool tzatziki, toasted bread, and a balance of earth and brightness.
This ended up becoming one of the dishes we served at Fester Lab.
