On behalf of the team, I'm pleased to announce that Dan Craig has been appointed as the new coach for the Bocuse d’Or Team Canada. Dan has been a staunch supporter of Canada’s candidate, Keith Pears, and the team, and we are thrilled to have him at the helm.
Dan and Keith share a significant professional history, having worked together at the Delta Burnaby in British Columbia for five years early in their careers. Dan, who hired Keith in 2009 and mentored him through various roles, saw Keith rise through the ranks. In 2014, when Dan relocated to Toronto to open the Delta Toronto hotel, Keith became the Executive Chef of Delta Burnaby, and subsequently, when Dan assumed the role of Executive Chef at the Ritz Carlton Toronto, Keith took on the Executive Chef position at Delta Toronto.
Dan's distinguished career includes experience at the Michelin-starred L’Abbaye St. Ambroix in Bourges, France, under Chef François Adamski (Bocuse d’Or Gold 2001, MOF 2007), as well as stints at Mugaritz and Arzak in San Sebastián, Spain. His executive chef roles include becoming the youngest executive chef in Delta Hotels and Resorts' history at Delta Burnaby, leading a new culinary initiative at the flagship Delta Toronto in 2014, and serving as Executive Chef at the Ritz Carlton Toronto before joining the Westin Harbour Castle Hotel in 2019, one of Canada's largest and most recognized hotels.
Dan competed in the Chaine des Rotisseurs Jeune Chef Concours and winning a gold medal for Canada at the International finals in Adelaide, Australia. Additionally, he has had the opportunity to work at two of the world's top 50 restaurants, Quay and Tetsuya’s, in Sydney. In 2015, Dan placed second in the Bocuse d’Or National Finals in Canada, and in 2016, he was honored with the ACE Executive Chef of the Year Award for all Marriott properties in North America. In 2023, Dan was inducted into the prestigious Académie Culinaire de France at the French Consulate in Manhattan, New York.
Dan's extensive competition experience and notable accomplishments will undoubtedly be invaluable assets to the team. We are confident that his leadership and expertise will greatly contribute to Team Canada’s.
