Creamy Chickpea Butter Masala with Tikka Masala Naan ( @trulyindianfood )🌱🧈🔥 Ingredients✨ Chickpeas
3 or 4 cans chickpeas, drained & rinsed
Salt to taste Butter Masala Sauce Base
1 medium yellow onion, sliced
1 cup to stick vegan butter 3 tbsp tomato paste
1 tbsp lemon juice
1 tbsp fresh ginger, minced
1 tbsp garlic cloves, minced
1 can (14 oz) diced tomatoes
8 oz vegan cream cheese
1/2 cup plant-based milk Masala Spice Blend 
1 tsp smoked paprika
1 tsp ground cumin
1.5 tsp garam masala
1.5 tsp red chili powder
1/2 tsp ground turmeric
1.5 tsp salt Vegan Tikka Masala Naan 1 package (3 pieces) of @trulyindianfood Tikka Masala Naan Cooking Method ✨ Prepare Chickpeas
Drain and rinse chickpeas.
Cook/heat them on stove top. Cook Naan
Cook the package of Truly Indian Naan as per the instructions. 
 Butter Masala Sauce
Sauté sliced yellow onion in vegan butter over medium heat until soft.
Add tomato paste, lemon juice, ginger, garlic, and masala splice blend.
Cook for 2 mins.
Stir in diced tomatoes and simmer over low/med heat for 5 mins.
Whisk in vegan cream cheese and plant-based milk. 
Blend sauce in batches for an extra silky texture, then return to pan. Combine Chickpeas and Sauce
Add chickpeas into the butter masala sauce.
Simmer for 5–10 mins until fully coated and heated through. I found @trulyindianfood Tikka Masala Naan at my local @sprouts in the freezer section :) They do also have a garlic naan (it’s vegetarian, not vegan) so stuck with the Tikka Masala! ✨🛒 #vegan #veganfood #plantbased #vegansofig #veganrecipes

Frozen Strawberry Lemonade Shaved Ice 🍓❄️✨ - a little hack for getting your fruits & electrolytes in through a sweet treat (used @goultima from Target) #ad Fully Plant-Based 🌱 Makes ~2 servings Ingredients✨ 2-3 cups frozen whole strawberries Electrolyte Pour 1 stickpack of @‌goultima (I used Pink Lemonade) 1/4 cup cold filtered water 1/2 tbsp maple syrup Coconut Cream 3 tbsp coconut cream (thick top layer from a chilled can) 1 tsp maple syrup Splash of vanilla extract Garnish Fresh mint Instructions✨ Prep Coconut Cream Mix together coconut cream, maple syrup, vanilla extract. Make the Electrolyte Syrup Mix water, Ultima stick pack, and maple syrup. Shave the Strawberries Using a fine grater or microplane, grate frozen strawberries into a chilled bowl until light and fluffy. Assemble Pile shaved strawberry ice into a bowl. Slowly pour the electrolyte syrup over the top so it soaks in. Toppings Top with coconut cream. My first ever shrimp boil… and yes, it’s fully vegan 👀🦐🌱 Inside (ALL vegan): shrimp, sausage (my bad in the video i said carne asada but it’s sausage, whole potatoes, corn — all drenched in a garlicky, spiced sauce that hits. Vegan Pesto Pasta Salad (Meal-Prep | High-Protein) 🌿✨ x4 servings ~33g protein per serving Ingredients✨ Pasta & Protein 1 lb pasta (fusilli or rotini) (1 box) (64g protein) 1 block extra firm high-protein tofu, cut into very small cubes (40g protein) Veggies 1.5 cups cherry tomatoes, quartered Creamy Basil Pesto 2 cups fresh basil 3 garlic cloves 1/2 cup nutritional yeast 1/3 cup pine nuts 1/2 cup olive oil 1/4 cup plant-based milk (I used @maizlyforall Original Cornmilk) 3 tbsp lemon juice 1 tsp Salt and 1 tsp black pepper Instructions✨ Cook Pasta Boil pasta according to package instructions. Drain and rinse with cold water until fully cooled. Prep Tofu Cut tofu into very small cubes (tiny bite-sized pieces). Air-fry on 450 degrees for 7-10 mins or pan-sear for 5-8 mins. Make Pesto In a blender, combine creamy basil pesto ingredients. Adjust consistency with a splash more milk if needed. Assemble In a large bowl, combine pasta, tofu, and cherry tomatoes. Pour pesto over and toss until everything is evenly coated. Garnish with extra salt to taste. Chill Refrigerate for at least 30 mins before serving so flavors can meld. Storage Store in airtight containers in the fridge for up to 4–5 days. Air Fryer Plant-Based Pizza Rolls in just 10 mins 🍕🌱 x4 mini pizza rolls in 10 mins Ingredients✨ 2 rotis or tortillas (I used @eatarya roti) 1/2 cup marinara or pizza sauce 1 cup vegan mozzarella shreds 1/4 cup white onion, diced 1/4 cup bell peppers, diced Sprinkle of oregano Sprinkle of chili flakes Olive oil spray Instructions✨ Assemble Rolls Lay roti flat. Spread a thin layer of pizza sauce. Add the cheese, onions, and peppers evenly on one side length-wise. Roll tightly like a wrap. Cut in half. Top Place rolls flat in the air fryer basket. Spoon a little sauce on top of each and sprinkle extra cheese, oregano and red chili flakes. Air Fry Air-fry at 375°F for 5 minutes until or crispy and golden. Finish Garnish with more oregano Serve with extra pizza sauce for dipping. Tropical Electrolyte Pops 🌴🥝✨ - my hack for getting your electrolytes in… but make it fun with @goultima #ad Fully Plant-Based 🌱 Makes ~6–8 large popsicles Perfect before or after a work out 💪🏽 Ingredients✨ 3 stickpacks of @‌goultima (I used watermelon from the Tropical Variety Pack) 2 cups cold filtered water total 1 tbsp maple syrup (to taste) Fresh kiwis, thinly sliced Instructions✨ Mix the Base Whisk together water + Ultima stick packs until fully dissolved. Taste and add maple syrup depending on how sweet you want it. Repeat with other flavor Prep the Molds Line the sides with kiwi slices (press them flat) Add any extra optional fruit. Pour Carefully Fill molds slowly so the kiwi stays in place. Freeze Freeze 6–8 hours or overnight until fully solid.
