New Coffee Drop!
Mexico
Mauricio Giron
Varietals: Bourbon, Tipica, Caturra, Costa Rica, Marsella
Process Method: Honey
Taste Like: Blackberry, Watermelon, Cherry, Plum, Apricot
This is the first Mauricio Giron coffee I’ve carried, and it won’t be the last. Coffees like this are the reason I love being a roaster. It’s complex and slightly funky in the best way, with so much rich blackberry juice character. In some ways, it reminds me of a funky Ethiopian coffee I loved back in 2018. This coffee is special, and it’s exactly why it fits Inugami so perfectly. Thanks to @naked.dog.cafe

Zambia
Kateshi Coffee Estates
Anaerobic Natural Catimor
Taste like: Red fruit Compote, Berry, Slight Winey Funk)
This is an outstanding coffee. I had to try it and then offer it because it fits Inugami perfectly. I’m not sure what I could compare it to, it has a rich body with these awesome stewed fruit notes. It’s slightly acidic, but in a smooth, rounded way. A very unique coffee.
Colombia

El Salvador
Roberto Ulloa
Red Bourbon Natural

I’ve had several amazing washed coffees so far this year that have elevated how I think about them. That said, naturally processed coffees are still my favorite. This coffee is a perfect example of why I love natural coffees, Roberto Ulloa has produced a beautifully juicy cup.

New coffee drop!
Colombia - Juliana Guevara and Wbeimar Lasso
Type: Pink Bourbon Natural
Taste like: Cherry Lemonade, Stewed Fruits, Sweet Hibiscus
Excited to drop this perfect Pink Bourbon for the summer time. This natural process has amazing Cherry limeade notes while still being so sweet.
This week’s drop includes last week’s three new coffees and something I am really excited about. A natural pink bourbon, from Juliana Guevara and Wbeimar Lasso. This is the first coffee I have offered from these two amazing producers. It will definitely not be the last.
Many years ago, Pink Bourbon is the coffee that taught me how to dial in espresso. I had to learn so much on my first bag of Pink Bourbon. It didn’t pull like the other varietals I was used to back then. Everything else was easy compared. In these days I treated everything like a OMNI roast which I still kinda do.
This particular Pink Bourbon was temperamental and wanted to constantly pull 10 second shots (back then as I was still learning I was trying for standard 30 second shot) but when I was able to pull it good it was amazing. It was a beautiful balance of acidity and sweetness.
The first time I tried this new coffee I was reminded of back then. Even this coffee years and years apart from that first one reminds me of where I started.
I’m glad it does.
Saturday new coffee drop!
Colombia - Edward Sandoval
(Wush Wush Washed)
Taste like: Tropical Fruit, Maple Syrup, Sparkling Sweet Lemonade
I’m so grateful I was able to get enough of this coffee to produce a run of bags. Wush Wush is still my favorite coffee varietal. This producer is new to me, and it’s also my first time roasting a washed Wush Wush. I’m excited to hear what you awesome people think of this coffee! #edwardsandoval #wushwush
Saturday new coffee drop!
Colombia - Edwin Noreña
(Caturra Carbonic Honey Green Apple Co-Ferment)
Taste like: Green Apple Candies, Apple Cider, Mojito
Our seventh Edwin Noreña at Inugami! We haven’t carried a Noreña coffee since Halloween, and this one is pure co-ferment deliciousness. Two different co-ferments are married together, similar to a wine-processing method. @campohermoso_coffeefarms #edwinnoreña
