#GiffardWestCup2026 #GiffardAsiaPacific My name is Cess, bartender from @opalbarmnl and this is my #GWC2026 #SipTheMoments submission — a story about my rhythm from sunrise to moonlight. Growing up in Ilocos taught me to cherish the serenity of a simple life—mornings that ease in, nights that melt into stars, and that fresh province breeze that’s pure magic. It’s a life I constantly yearn to go back to. Hence, I have crafted two drinks that capture a taste of home. ☀️SUNRISE COCKTAIL - BANNAWAG Ginataang Bilo-Bilo is Ilocano’s counterpart for Champorado. It’s a bowl of chewy rice balls, sago, jackfruit, sweet potato, ube, and coconut milk that warms the spirit on a gloomy day. The base is a Jackfruit infused bourbon, blending the fruit’s sweetness with the bourbon’s oaky richness, echoing Ilocanos’ signature mix of toughness and warmth. The ube cordial contributes a luxurious texture and nutty sweetness, elevating the cocktail to a visually stunning creation. Giffard Noix de Coco harmonizes the blend, rounding out the experience. Overall, this drink is like taking a vacation in Ilocos—smooth, fruity, and perfect for sipping. 60ml Jackfruit infused bourbon 15ml Lemon 10ml Ube cordial 30ml Giffard Noix de Coco Method: shake Garnish: latik, with aer foam Glassware: coupe 🌙 MOONLIGHT COCKTAIL - RANIAG ‘Patupat’ is an Ilocano delicacy that’s made of sticky rice, coconut milk and sugar, wrapped in banana leaves and steamed to perfection. It is usually enjoyed as a snack or dessert at any time of the day, but I personally like eating it at night to satisfy my midnight cravings. This drink has a rich rum base, infused with roasted glutinous rice which elicits a nutty and smoky flavor. This honours the Ilocano people, who are known for their adaptability and tenacity, as the roasting process turns ordinary ingredients into a flavourful gold mine. The Giffard Noix de Coco imparts a lenticular sweetness that not only delights the palate but also embodies the effusive hospitality of Ilocanos. 60ml Roasted glutinous rice infused rum 30ml Giffard Noix de Coco 15ml Amaro Averna 2 dashes Chocolate Bitters Method: throw Garnish: Patupat Glassware: rocks
