The rumors are true yall- THIS FRIDAY AT 9pm FOX TALE IS GOING TO BE FEATURED ON DINERS, DRIVE-INS & DIVES with GUY FIERI “Buns, Burgers and Bolognese” This trip, Guy Fieri’s diggin’ into burgers, Bolognese and more! There’s a husband-and-wife team in Sacramento, Calif., puttin’ their stamp on craveable Asian with prime-time pork dumplings and braised beef noodles. Then, a Palm Beach Gardens, Fla., bistro is mixin’ up a mighty meat sauce and pressing a righteous roast beef panino. And in San Jose, Calif., a mom-and-pop shop is servin’ plant-based faves, like the-bomb black bean burger with cashew queso, plus a funky fermented power bowl! Tune in to @FoodNetwork on Fri, April 10 at 9pm to catch our restaurant on #DDD We will be closing the kitchen EARLY this Friday night at 830pm so we can all enjoy the excitement down here to watch our episode at Fox Tale!! It is incredible how much emotion and story you can convey in an 80 second video. Somehow Rob & Peter at 10Watt Pictures (@10wattpictures ) managed to capture and communicate so much of our heart and ethos at Fox Tale Fermentation Project. We are absolutely in love with this video they created for us and we are so pleased to share with all of you a little snap shot of life on Santa Clara Street. Rob & Peter are the founders and Producers at 10Watt Pictures - both with a long history in the film/sound/music industry. Like us, they have decided to branch out, taking their skills & knowledge to a place where they can give their unique perspective in a beautiful way. It was such a blast working with them, telling our story and showcasing why we do this. Introducing Bolita Rosa, 4.5% - Nixtamalized Pink Corn Lager brewed in collaboration & connection with Emmanuel @bolitamasa / @cafebolita . “How do you come up with these concepts?” It’s a question we’ve been asked since we first opened the doors at Fox Tale. The answer rarely changes. It always circles back to the same root: culture, and creating an environment where it can grow. Figuratively. Literally. Almost four years ago, we launched our lager program with a Blue Corn Lager called Drink Cultura. It wasn’t just a beer with corn. And it definitely wasn’t a “Mexican Lager.” It was a quiet declaration of my Chicano identity, something woven into the brick and atmosphere of this place. That beer carried the irony of living between cultures. The tension. The pride. The damnation and the salvation of it all. Over the years, we brewed different expressions of malted corn. Each Cultura had its own voice. Its own shade across the kernels. But something lingered, a feeling that the story wasn’t finished. We had corn, but not maíz. Not the origin. We wanted maíz from the source. From Mexico. From the hands and spirits that understood it long before I ever touched a mash paddle. Meeting Emmanuel from Bolita felt less like networking and more like remembering why we started this in the first place. We talked about masa like it was family. About nixtamalization, the patience, the chemistry, the aroma of corn transforming. About how corn isn’t just an ingredient. It’s inheritance. So we brewed. Oaxacan Pink Corn (Bolita Rosa), nixtamalized, rinsed, coarsely ground, folded into the mash. The brewhouse smelled like a cocina. Like remembering the song that was sitting on the tip of your tongue. The beer that came from it is dense with unmistakable masa character. Dry, structured, lifted by Hallertau and Saaz. Easy drinking, but layered. New to me, yet familiar all the same. Thank you, Emmanuel, for trusting me with your maíz and your craft. I believe we accomplished what we set out to do. Creating culture through food. Creating community through culture. And somewhere in the process, I understand corn a little more now.

ICE is terrorizing communities through raids, murders, detention, deportation, and the constant threat of separation. In response, Fox Tale Fermentation Project stands in solidarity with immigrants, workers, and organizers resisting this violence and participating in the general strike tomorrow. During this time, we have decided that we will remain open as a space of refuge in downtown — a place to nourish, hydrate, rest, and gather. Providing safety and sustenance in moments of state violence is our political act. Fermentation reminds us that survival and transformation are collective processes. We take care of each other when systems refuse to. Come gather. Come rest. Come nourish.

Officially, please say hello to Michi! (As in the cute name for a kitty and short for Michelada) We are over the mooooon and he is @hoppypapi ‘s FIRST DOG EVER!! I’ve waited over 12 years since losing my precious Balooga so long ago, and I’m so in love with this dude it’s unreal, honestly healing. I think he’s a ChiWeenie. He’s 14 weeks old and he’s the best pup of all time.
