Mostly, I stick to baking with my usual round or rectangle cake tins and tend to shy away from anything else. Pretty much everything starts with a simple circle or rectangle and evolves from there- I don’t think you should need a big library of cake tins to create any themed cake. Life feels cluttered enough, lol 😂 In saying that, I bought this dome tin a few years back- it’s been sitting on the shelf gathering dust, so have been trying out a few ideas with it. I like to imagine a little fairy family living in this toadstool house! 🍄 🥰

Hi! I’m Rachel 👋 It’s great to have you here! I get really excited about fun, colourful food- it must be the kid inside me that never grew up (I’m 40 now, so I don’t hold out much hope that I ever will but I’m 99% okay with that). I worked as an Intensive care nurse until we (my fav person @krusty_savage and I) decided to give life in the countryside a whirl about 10 years ago- we have never looked back. I can be a pretty messy cook (I like to call it creative cooking 😅). Hands down my favourite role to date is being mama to 3 kids who are always hungry and always (well, mostly) up for an adventure. I love seeing your creations, thanks for taking the time to share them or send them through. It makes me so happy to know there are other people who love fun and kooky food snacks as much as me! (A huge ❤️ to my dear friend @petamazey for this photo, who is some kind of magician and manages to disguise all camera awkwardness 😆)

When the lovely people at @hellolunchlady asked me to bake some cakes for their current issue, I jumped at the chance! Cake is most definitely the way to my heart 🥰😝This project had me feeling very nostalgic and remembering choosing birthday cakes as a kid (moooonths before my actual birthday- it was a nail biting process that I don’t think any of us will forget! 😉) The cakes here are nice and simple to bake- with a focus on some decorating that is a bit special- and I hope that you’ll have fun making (and eating) them. Which brings me to my next very important question: what was the BEST birthday cake you ever had as a kid?

Rilakkuma! 🧸 Chocolate mudcake filled with salted caramel and chocolate swiss buttercream, a classic (this bear deserves only the best) 🥰

We woke up to snow on the hills yesterday 😍 so we ventured out, armed with a hot choccy thermos and a bag of ‘mallows. Kids decided it was only fitting that we listened to ‘Rockin’ around the Christmas tree’ on repeat during the drive there (and the return trip too- as these Christmas fanatics are a force to be reckoned with) 😅 Cold hands (or paws, if you’re Pocket) and happy hearts! ❤️

What a wonderful way to wrap up the working year: a picnic for our friends @repose.ams 🌸 On the journal page at their website, you’ll find recipes for some fun rainbow veges; our fav risotto; melt in your mouth lamb shanks and a flourless choccy cake (that is featuring on repeat around here rn). Special mention to my lovely models, especially the littlest, who made me work quite hard 😆 (Gotta love a bit of attitude, can’t possibly think who he inherited that from) Meri kirihimete, friends! ❤️❤️

We celebrated a beautiful family wedding a few weeks back for my cool lil bro and dear new sister @melissaag10 ❤️ In a series of firsts for me: I sat still for more than 2 seconds and even managed to not look awkward! 😂 @davidle_nz snapped this pic- what a legend. Tysm, David ✨

Honestly, working with kids is the worst sometimes- they’re just so funny and it’s really hard to concentrate and not get caught up in their jokes. This is one such occasion where I’ve struck these difficult working conditions- I mean, how cute are they all?! 🥰😆

You’ll find these patty face cakes in the latest (and final!❤️) issue 30 of Lunch Lady. With sweet licorice faces and kitchen fork styled hair- these cakes are gluten free too. Always a pleasure @hellolunchlady ☀️

We had a bunch of friends over recently and I made a big chocolate sponge tray cake. I was feeling super uninspired about decorating it (and while I envisaged it covered in bountiful blooms, I just don’t have green fingers like my dear mama 😅) So, I settled on trying out some patterns instead. It turned out kinda fun!
