HOW TO MAKE A HAPPY ORANGE SNACKâ
â
What youâll need:â
⢠oranges (we used organic oranges, as we like to nibble the rind! If youâd prefer yours without rind, just peel off the orange skin before you slice them up)â
⢠sharp knifeâ
⢠100g / 3.5oz melted dark chocolate (this will be enough for 2 or more oranges)â
⢠small deep bowlâ
⢠piping bagâ
â
Steps:â
â
1. Wash and slice oranges into 0.5cm / 0.2" thick slices. Place them on a clean tea towel to help them dry off a bit (this will help the chocolate stick to oranges).â
â
2. Melt chocolate in a small, deep bowl.â
â
3. Have a baking tray or board ready. Dip oranges into chocolate and place onto the tray. You can make different hairstyles for each face!â
â
4. Pipe chocolate dots or little curves for eyes, a smile and any other face details.â
â
5. Give oranges a quick blast in the fridge to help the chocolate harden. If itâs a hot day, store them in the fridge until youâre ready to eat.â

WHOLE MANDARIN CUPCAKE RECIPEâ
(PEEL AND ALL!)â

This recipe makes 12 little cupcakes. â
No icing required. â
â
Ingredients:â
⢠4 whole seedless mandarinsâ
⢠6 large eggsâ
⢠1 tsp almond extractâ
⢠1/2 cup raw caster sugarâ
⢠2 cups ground almondsâ
⢠1 tsp baking powderâ
â
Steps:â
â
1. Preheat oven to 180°C / 356°F / Gas Mark 4. Prepare a cupcake tin with cake liners.â
â
2. Using a scrubbing brush, wash the mandarins in warm water to remove any wax on the skin.â
â
3. Place the mandarins in a medium saucepan and cover with boiling water. Boil until the mandarins are soft, about 60 minutes. Top up the water if it gets low.â
â
4. Blitz mandarins in a food processor to make a puree. â
â
5. Whisk the eggs until frothy. Add sugar, ground almonds, baking powder, almond extract and mandarin puree. Stir thoroughly.â
â
6. Pour into cupcake liners and bake for 30â45 minutes, or until a skewer inserted in the centre comes out clean.â

Spiced Green Tea with Orange + Whisky â
â
Makes 1 cup â
â
⢠1 green tea bag â
⢠1 cinnamon quill â
⢠1 star anise â
⢠2 strips of orange rind â
⢠juice of 1/2 orange â
⢠1 heaped tsp honey, optional â
⢠boiled water, cooled slightly â
⢠1 nip of whisky, optional â

1. Place the green tea bag, cinnamon, star anise and orange rind into a cup. â
â
2. Pour in the slightly cooled boiled water and allow the tea to steep for 5 minutes. â
â
3. Squeeze in the orange juice and stir in the honey. â
â
4. Add the nip of whisky, if desired. â
