Nobu is the reason why hello uncle started. If it weren’t for the first one for chefs helping chefs I wouldn’t be here with you guys. He’s the reason why all of this is happening and I owe him greatly for that. We’d sing bohemian rhapsody on karaoke and this was our favorite part to sing Becuase I was the high pitched voice and he was the low. Such a good duet. Here’s to @ubonix88

A truly special #sake experience at Blue Door during Charlotte Wine + Food Week
Hosted by CW+F Board Member Cat Carter inside the private speakeasy at @bluedoorclt , guests experienced a multi-course dinner by Chef Michael Le of @hello_uncle_clt — one of Charlotte’s rising culinary talents, featuring thoughtfully selected sakes alongside sake-inspired cocktails crafted by Mike Guzmán, Beverage Director & Operator of Blue Door.
Shunsuke Takasawa of KIKUSUI SAKE CO., LTD @kikusui_pr , traveled all the way from Japan to share each sake, alongside educator Sara Guterbock (“Sake Sara”), who guided guests through the experience.
A special thank you to all our partners for creating such a unique experience and for surprising us with a few incredible auction lots that netted over $15,000 for our beneficiaries.

Asian Sauce Basics with chef Michael Le of Hello, Uncle (@hello_uncle_clt ) 👨🍳✨
Chef Le will host a live cooking demonstration at Free Range Brewing (@freerangebrew ), breaking down three core Asian sauces made with everyday pantry staples. Along the way, he’ll share tips on how to use each one in your own kitchen.
Guests will sample three dishes featuring the sauces: nuoc cham (Vietnamese), khao man gai sauce (Thai), and muối ớt xanh (Vietnamese).
Beverages will be available for purchase from Free Range Brewing.
