When South Carolina meets Southern California, magical things happen. @hatchetchief and the crew at @dunsmoor.la take ‘cooking with care’ to the next level. Their cornbread became an instant cult classic (when you taste it, you’ll understand why). Every delicious detail at Dunsmoor is inspired, intentional, and done with a dedication to understanding and honoring the historical context of food. We are honored to be a part of the inaugural dinner in their new series, American Heritage Cookery, that will explore the whys and hows of American cuisine in collaboration with experts in their field. 🌾 Join us at @dunsmoor.la on Thursday, September 12th for an enlightening food journey through the Lowcountry — revived ancient grains and native ingredients will make an appearance in every course. It’s gonna get weird. Turn up! Sometimes the bike ride is just a small part of the journey, it's what gets you on the road that really matters. Join us (@cncptteam ) this Saturday Oct 16th as we premiere our short documentary;  "Theses Old Roads | Alaska" at @goldensaddlecyclery 7pm. We'll have extra visuals of LA's cycling days of yore courtesy of @thesleepers and an amazing food pop up from @masticacalifornia ; and we'll finish the night with a karaoke afterparty!

The history of American food is complicated. The “facts” often contradict each other. Read a lot of books, both new and old. Try to put it together yourself. Here are a few of the books that really stoked the fire for me throughout my career. I guess most of these would fall under the “older” category but have a lot to offer. I’ll post some of my newer favorites soon. If anyone has any good reads I might not have heard of send them my way! Never stop. Keep learning.

Wow! What an honor to be involved in such an important and powerful project. In December of 2019, @1m9n8d5 and myself had the privilege of working with two true legends @isawstephen and @drjessicabharris on the new @netflix mini-documentary series #highonthehog . We are so proud that our American food history dinners at @hatchethall made it this far and we hope that it will inspire young chefs to dig into the truth behind our nation’s cuisine. Using historical American techniques & story telling, we payed homage to the generations of the many different hands in the cooking pot which shaped America’s foodways into what it is today. I’ll say it again. What an HONOR! Although @1m9n8d5 and myself are no longer cooking at Hatchet Hall we will continue to push forward in discovering the truth about our country’s cuisine. Done and done! Money for a great cause. A great cause for a great group of people! Thank you to everyone who donated to the Hatchet Hall Family Fund yesterday! It means so much and will go so far! We’re at $2,500 out of our $10,000 goal! Yesterday was a great first day but we still have a ways to go! Thanks for everything! If you frequent Hatchet Hall you already know that everyone working between the walls is more than a member of a restaurant staff. We are a family. Most everyone has been with us since the beginning or shortly after. We have always been proud of being able to support our family and theirs. We made the decision to close our doors as soon as COVID19 became a threat. Money and “things” can be replaced. Life cannot. We value the health and safety of our restaurant family before all else and they need your help. Anything that you are capable of giving will go so far. Whether it puts food on the table, helps with rent or keeps the electricity on, any donation will help. Thank you in advance for your generosity now and all your support in the past. I rarely post and never get sentimental on the web but there is a time for everything. I just wanted to thank Bobby @endocustoms for choosing me for the 2020 @cncptteam . I am truly honored to be riding with the WILDEST and WEIRDEST team in the country. I’d also like to thank @alonsotal , @alvinescajeda , @human_trash_heap , @squidcirclepit and Tim for having me. I know this team is not a dictatorship it’s a democracy. Also big congratulations to @sean_eric_martin ! Being a chef @hatchethall and a cyclist, I live in two of the most pretentious “communities” out there. Here’s to all of you who “do you” and say “the hell with the rest”!
