It was an honor to meet with Herlina and to hear about her recent trip to Westvleteren, and to chat about the heirloom grains that we source for Hanabi Lagers, including our current very special release brewed with Hourani, an ancient grain thousands of years old. Amazing to see @hanabilager featured in @sfchronicle this week in a story by @esthermob . Over the past few years, Iāve been documenting Nick Gislason ā Screaming Eagle winemaker by day and innovative brewmaster by night ā and his tight-knit Hanabi team. From the methodical selection of farm + supplier partners and rare grain varieties to secret beer parties in barley fields to the magical seed-sprouting (malting) process, hereās a bit of everything.
Slow Food International is hosting its Terra Madre Americas event in Sacramento this weekend, September 26th through 28th at the Convention Center. Itās going to be a huge event with food and drink tastings, chef demonstrations, and seminars featuring producers from throughout the Americas.
Come taste our latest seasonal beer, Hourani Pilsner, alongside breads, pastas, and other foods crafted from heirloom grains. š¾āØ

As the Autumn Equinox tips us into the harvest season, weāre excited to share our Autumn 2025 Hanabi Lager: Hourani Pilsner.
This Pilsner is brewed with Hourani, an ancient wheat once buried for safekeeping nearly 2,000 years ago at Masada, a RomanāBiblical fortress in present-day Israel. The seeds lay hidden for centuries until unearthed in the 1960s ā and have now been revived by Elizabeth DeRuff and Honore Farm & Mill.
Organically grown at Full Belly Farm in Northern California ā pioneers of the organic movement and the first supplier to Chez Panisse ā this grain carries history, resilience, and uncommon flavor into your glass. š¾

The team at Hanabi Lager has always been steeped in the spirit of collaboration, working with talented folks in adjacent fields to make tasty art that we all can be proud of. We welcome the opportunity to be constantly pushing our understanding of brewing and farming the worldās tastiest beers. One such collaboration was with a couple Scandinavian chaps, brewers and authors, that are just as passionate about brewing and drinking great lagers as we are. Meet @beerbychristian and Jens Eiken, authors of The Naked Beer ā The Book About Pilsner. We put our heads together last year about a mutual muse, an ancient grain named Bere Barley, that has become a favorite of ours at Hanabi Lager. We brewed a special beer using a unicorn crop of this extremely rare barley, grown on San Juan Island, Washington right next to the ocean, and it featured last Autumn for those lucky enough to try it. Concepts like our āheirloom grain lagersā and other interesting new takes on the Pilsner style of beer feature in their book, alongside a lot of information about more traditional approaches of brewing the worldās most popular style of beer too. The event at Tara Firma Farm last month was such a fun time! For those who couldnāt make it, there was a chance to hand-harvest an ancient variety of wheat called Hourani, that was recovered from the ruins of Masada in the middle east. This special seed reaches all the way back to biblical times, when Herod the Great built this fortress, and stocked it with the best wheat in the lands. We have an opportunity to work with it, grown organically, in Northern California, thanks to the efforts of Elizabeth @honorefarmandmill , @tarafirmafarms , @full_belly_farm , and @admiralmaltings . Cheers to good food, and reconnecting with one of the most ancient and important staple foods that humanity has ever grown: GRAINS!

Fresh off the release of our Summer 2025 seasonal lager, our team is currently up on Lopez Island, Washington, helping prepare the islandās annual grassroots 4th of July fireworks display.
This community tradition has been lighting up the San Juan Islands since 1951. Nick Gislason, our head brewer, is proud to serve as the third pyrotechnics director in its history, mentored by former lead Dwight Walters from an early age. Itās a barn-raising kind of event, built entirely by volunteers, fueled by local pride, and powered by shared joy.
While on Lopez, weāre also strengthening relationships with nearby organic farmers to source heirloom grains, from right here by the ocean, where Nick grew up. We canāt wait to bring these special grains from their coastal fields to your glass.
As we celebrate this 4th of July season, may we all embrace our local communities, share the love, focus on what unites us, and create something meaningful together. Letās get our hands dirty and Let the Sparks Fly!

For those unfamiliar, spelt is an ancient relative of wheat with a long history that dates back over 5,000 years to the Fertile Crescent. It originated when durum wheat naturally crossed with wild goat grass. Those seeds sprouted and subsequently crossed with Emmer wheat, and the result became known as spelt. Over centuries, spelt was spread across Europe, known for its large, flavorful, and nutritious grains. Spelt developed a reputation for being more digestible than many modern wheats, and the gluten is said to be more agreeable to those with light sensitivities as well.
Spelt arrived in North America with farmers in the late 1800s and gained popularity in the 1960s with organic farmers. As an ancient grain, it is naturally hardy, requires minimal fertilizer, and grows well under organic farming conditions. This aligns well with our brewing preferences at Hanabi.
Our latest release showcases Elwha, a variety of spelt grown in Washington Stateās Horse Heaven Hills. This crop of Elwha was grown on the Moon Family Farm with no-till practices, minimal inputs, and irrigated exclusively with rainwater. The Moon Family has been growing grains in this area for 5 generations, and we greatly respect their approach to the health of the land and grains.
