We’ve hand-petaled this buttery Kingfish into a rose over a tart Blood Orange and Tamarillo Gazpacho. we’ve added Mexican Marigold(pericon)from our garden, an “umami shatter” of Fish Sauce Granola, fermented Kosho, and an NZ-style Sauce Vierge. A dish that traces a map from the Haku currents to our Restaurant!

Day 4 part 1 of wine, food and fun in Hawke’s Bay saw us head out to the coast and seek a taste at @elephanthill - The staff treated us impeccably, and @lisaxbritton and I got to try a wide and stunning range of wines (thanks Rudi and Jenna). This producer focuses on emphasising terroir which encompasses the physical settings of sea, earth and stone unique to the mix of vineyards they draw on. We transitioned into a “trust the chef” long-lunch dining experience in a secluded setting overlooking the grounds out to the ocean, and any thought of going hungry disappeared quickly as plate after plate of incredible dishes flowed forth. My favourite was the main of succulent pork with herb freekeh and roasted apple matched with the Airavata Syrah. The smoked beetroot with nori and fennel cream was unusual (in a good way) and was one of the most stand-out dishes I’ve tasted anywhere. The @hakukingfish was solid as usual too!! Stroll through the vines after showed spring growth is truly underway, and Chardonnay is in the lead…..
A refined dish showcasing the elegance of Ruakākā-farmed Haku Kingfish. Dan elevates it with a vacuum-infused glaze of our honey and pairs with basil oil, pickled grapes, pistachio and sago crisps for complexity and texture.
Farmed @hakukingfish wrapped around wild-caught, in burnt cucumber, ponzu, sweet fresh asparagus and topped with avo sorbet. My fave from a lunch this week where my guests were having their first taste of Ahi and absolutely loving it.
