Here’s (most of) what I prepped for our extra long Catskills weekend ʕ •ᴥ•ʔ

I intended to prep blanched spinach but forgot about it. Then, I planned to grab some from the market when we picked up bread and forgot about it again. Needless to say, greens were sorely missed. I’ll definitely be packing a BIG salad next time. Something cold, fresh, and crunchy would’ve been a nice addition to our cozy menu.
Of the 5 nights and 4 days we stayed Upstate, we ate out on three occasions: once for dumplings (snack), once for
@gniv ’s incredible birthday dinner, and once for pizza. Dumplings were good, dinner was excellent, and pizza was a *hard* pass.
Takeaways: I’m sooo happy we brought food with us. The deep winter and personal slow down ahead of the fire horse Lunar New Year called for long, low-stress days indoors—not the job of combing menus for decent vegan options, driving long distances for a single meal, overspending on food we don’t love, or constant cooking. We’ll definitely be food prepping ahead of future trips.
Portioning out individual servings would make more sense for two people than bulk portions. It was hard to gauge how much we’d eat throughout the trip and I definitely over packed. But! It was totally worth it to have everything we might want and we’ve got food prepped for our busy week ahead.
Lastly, it’s an incredible privilege to travel. I used to dream for days like these and now, on occasion, it’s my reality. Our rental was FAB but not everything has to be extravagant to be a luxury. Having the means, time, space, and peace of mind to prepare this food is an extraordinary luxury within itself.
I hope to share more home cooked meals with people I love in 2026. For now, my cup and my belly is FULL! x
