I woke up about an hour ago. I gained consciousness and realized I was awake, but didn’t open my eyes for what seemed like an eternity. I couldn’t. I can’t face the reality that this is who America is, and if I thought I had cut some Trump supporters out of my life before, ho boy gonna be working on that again.

Picking just 10 for this experience is absolutely impossible, but if I have to do another round of story posting I'll probably drop dead so.

I've been doing this a long time, lots of different places, met lots of different people, blah blah blah. But it's only been a couple of times I would describe a team "coming together" at all, much less striking out together into a foreign land and coming out not only hating each other's guts less but, in fact, bonding in that ESP way you get with the people it feels like your whole professional life has been hurtling you toward.

Ours is a special restaurant, a place where the most democratic atmosphere I've ever experienced has hammered out a culture that is warm, creative, and self-improving. A beautiful mixture of ball-busting, pounds and hugs, taking each other to task creatively, and always being able to talk it out when the shit hits the fan or someone drops the ball.

The best part is, I don't even feel like I have to act like this will be the last time I do something cool with these cats. Y'all are one in a million. Let's keep this shit going.

I have a habit (and a personal tenet) of avoiding anything that might look like self-aggrandizement like the plague, but now I've been through 1.1 actual plagues and sometimes you do get what's going around. I've been tirelessly and tenaciously working toward this moment in my professional life for almost a decade. It feels pretty spectacular to have put together my first bar program, selecting or making everything from the prep systems to the cocktail menu to the unseen infrastructure to the spirits list to the bar's working ethos and philosophy with my own two hands. From many parts of our industry, I'm sure it might look like just another restaurant bar, but I am happy and proud to have had the privilege of building it. I am grateful to every mentor I've ever had for teaching me how, to everyone who supports me doing my beloved work, and to the excellent little Italian restaurant I hope to call home for many years. Now come get a drink and bust my balls over how obnoxious this post was!

Cognac / Camomilla, a refined and refreshing highball utilizing the delicate backbone of @bachegabrielsen_usa 3 Kors, the chestnutty herbal bite of Cardamaro, a tart hit of verjus blanc, and the comforting warmth of chamomile honey. Best enjoyed on a picnic in a field of wildflowers in the waning days of summer.
