Been working on the translation of our Australian Dry Gin recipe onto the new still this week. An amazing start and the citrus from a 50cm column/gin basket is just next level. Have to settle down a bit and see how it rests into its own. #gin #spirits #distillery
First day of full gin production on the new @muellerpotstills today! Longest journey to get here but were about to produce a lot of liquid of the highest quality and care possible... well we think so.
Super excited to flog (gentle slap on the behind) the system as we automate certain aspects and optimize our energy usage. DEACAM @deacamaust squad sorting out the system over a few months, Power + enabling us the sweet sweet amperage we thought we couldn't have, Fermecraft @fermecraft to optimize energy usage and automate the lot, DEECA (Dept of Energy, Environment and Climate Action) of Agriculture Victoria for some of the best timed funding a business could hope for.. and of course last but actually first (not least) in all this; the Spirits Victoria Association @spiritsvictoriaassociation for doing their thing the whole way through.

We have been a little quiet on the socials! Simple reasons being the fit-out and commissioning of our long awaited new production still from Muller Pot Stills. We are now absolutely seeing what it can do and the push for flavor has started.
For those who have followed our journey and spoken to us about this over the years, you know we are ecstatic to start this next chapter. It seems like a very low key image we know... its kind of the point...a new threshold has been crossed and I have about 2000 images in my phone of details no one else would find interesting.
