The audio edition is part recorded in a studio in London and part recorded ‘in the field’, by which I mean in the woods, in my kitchen, in my van and, in a few instances, actually in a/the field. It’s also got lots of extra stuff you won’t find in the printed edition - thoughts I’ve had since writing it, irks, musings (musings? Who do I think I am???). There’s musical beds under the selected recipes we’ve included, and at the end you’ll find a bonus chat between me and son @jemhpward , who’s been my collaborator on all things SH. GEORGE EGG: Live at River Cottage
I’ve been watching Hugh’s TV shows since the first series of A Cook On The Wild Side so you can imagine how pleased I was to be asked to bring my absurd (but very entertaining and, cough cough, award winning) comedy and cooking show SET MENU to River Cottage as part of their 20th Anniversary celebrations. On 13th June I’ll be performing the show in the beautiful Threshing Barn to a very limited audience. When the show has finished, we’ll all head into the cookery school, or outside (if it’s nice), for a drink and a chat while the barn is reset as a dining space where you’ll be served a seasonal feast with a menu inspired by the food cooked in the show.
It’s going to be an unforgettable experience and I do hope you can join me.
Some tacos i made last night, after being inspired by the amazing food I had at @embers.shropshire on Thursday.
1. Lamb breast birria with mint chimmichurri. The lamb was cooked using the recipe from Simon Hopkinson’s book The Good Cook - dusted with @shropshire.lad house rub seasoning then low and slow in the oven surrounded by onions. The onions then made into a jam along with anchovy and vinegar. Tacos filled with shredded lamb, onion jam, a little dry mozzarella to bind before being fried in lamb fat and drizzled with a sharp chimmichurri with lots of mint alongside the usual.
2. Chicken birria with hot sauce. Chicken thighs, marinaded in rose harrisa and a little sugar, barbecued then shredded and piled into tortillas with mozzarella before frying and drizzling with @magma.concepts hot sauce.
3. Scampi tacos. Oven baked scampi, avocado, shredded hispi, lots of lime and a sauce of aioli mixed with hot sauce.
Happy publication week (and happy birthday week) to my dear friend John Robins. His book, THIRST: Twelve Drinks That Changed My Life, is a funny, moving and hugely interesting read about growing up, discovering alcohol, what alcohol did and ultimately, recovery. And as if that weren’t enough, my son Jem Ward designed the cover. Congratulations John.
