Fresh fruit on big single tier cakes would have to be my favourite cake trend of late so I loved bringing this one to life which I call 𝑆𝑡𝑖𝑙𝑙 𝐿𝑖𝑓𝑒 𝑤𝑖𝑡ℎ 𝐹𝑟𝑢𝑖𝑡 🍇🍎🍐
Who’d have ever thought! Sumac lemon tart 🍋❤️ You’ll find this recipe on the “Recipes & inspiration” section of the @colessupermarkets website. Everything about it is incredibly easy - the pastry is a little fragile but just line the tin in two sections and press it together to seal and voila! It bakes beautifully for a lovely crisp crust.

I took inspiration from the number 5 cake in the new Taste.com birthday cake book for my niece’s birthday cake this year with some small tweaks because a) icing a number cake with a palette knife is tricky, so I just piped straight onto the cake and b) because I was worried I might run out of icing if I did try!!
This is actually a really easy cake to produce as most of the work is in the prep, so once the cakes and buttercream are made and you’ve coloured them and set up your piping bags, then cut the cake, the decorating happens easy breezy.
Swiss meringue really is my go-to buttercream for a cake like this as it pipes so well and holds its shape (so well you can even remove parts and fix any mistakes as you’ll see part way through!)
Any fluted nozzles will work in a design like this but the ones I used were a number 70 leaf tip, 195 and 6F star tips and of course 1M for that perfect rose 🌸

I’ve been following @cakepicnictour since it started and so was quick to snap up a Sydney ticket for me and my cake bestie @elisa_pie when they went on sale. It was such a fun day and perfect cake weather!
The theme was Spearmint to celebrate @kitchenaidausnz colour of the year so I dressed my cake in spearmint fondant ruffles with sugar flowers no less 💚🌸 Flavour was a Victoria sponge inspired vanilla cake with raspberry jam and vanilla buttercream.
I won’t lie, as no knives were allowed, the thought of only being able to use a cake server to cut my cake gave me the heebie jeebies but my trusty barbie mate did the trick!
I’ve been a mag girlie for such a long time I know this isn’t the first time I’ve had a recipe on a cover, but I do know it’s the first time in gold 🤩
This no-bake tart is dead easy; think cheesecake base crust, then melt and mix ganache filling that simply sets in the fridge. The only tricky thing is the toffee so be sure to use a good quality heavy-based saucepan. And don’t forget, toffee is like the ocean - never turn your back on it!

Punk isn’t dead (but we might have been if we got into that mosh! 🙈) By all reports it was an amazingly safe moshpit with everyone looking after each other. @lambrinigirlz you were brilliant and WILD!!!!! I’ve seen many bands at The Metro over the years but can’t say I’ve seen a lead singer climb up and then dive from the balcony! ⚡️⚡️⚡️

Couldn’t resist my own 2016 flashback as it was the year I really got stuck into cake decorating (and all the mistakes that go with that!) - fresh flowers sticking out of cakes, as well as lollipops; gold leaf applied by the sheet 🤣 and lots of drip cakes with the drips all flooded around the base 🙈 (I eventually learnt that white chocolate in the ganache would fix that). Also that last cake was so narrow and tall it fell over when I delivered it, thankfully to my very understanding friend 🙈🙈

One for the office (yay for smooth light rail rides) and two for the family decorated by my girls (royal icing by Mummy!) The little one is to take to Nonno’s nursing home today. His memory and health is a shadow of what it use to be but he has always loved the gingerbread house and so I’m hoping it will bring a twinkle to his eye this Christmas ✨
