Happy spring y’all! I’ve been putting off making this post, but here we go. This chapter of Gab’s Veg Table as we know it has come to a close. The last three years were an experiment to see if folks wanted super local, accessible, vegan food made by me, Gab- and you all definitely showed up. Ted and I met so many amazing people, on top of our existing community supporting us in this journey. There were plenty of reasons behind our decision, ranging from the intense labor needed to be a business constantly on the move, to finding a balance between covering costs while keeping our food accessible to everyone. In the end, some things in our personal life lined up while we were going through this process. Last month we moved out of Kingston (our home for the last ten years!) to do some long awaited travel around the country. We don’t know where we’ll land, but I want to start a new food chapter whenever we end up. Thank you to everyone who tried our food and supported our vision. It was only with our community’s support that the last three years were possible. Love Gab ā¤ļø

We’re super excited to be back at @whitecliffvineyard next Sunday May 24th! Spend the day with us from 12-5pm as we take in the beautiful views and serve up a tasty vegan lunch. Our Tortellini salad is back, filled with herb garlic @treeline_cheese , and tossed with lightly sautĆ©ed local asparagus and fresh herbs. We’ll also have our Baked Mushrooms Polenta with local @wildhivefarm stone ground polenta, and an herbaceous potato salad (both gluten free). And we’re serving two sandwiches on my favorite brioche buns from @littleloafbakeshop ! You should probably start your Sunday with the best soy lattes and pastries at their cafe in New Paltz before heading to the winery for a near perfect day. ~ Thanks to everyone who came out to our pop up at @sweetmaresas in April, it was so nice to see so many familiar faces and meet some new customers too :) Hoping to be back in Kingston in June for another two day pop up, and hopefully once a month for the rest of the summer. We’re going to make our classic sandwiches for our Sweet Maresa’s events (tofu piccata, phony bologna, good morning tempeh) and play around with new menus for our other events like our upcoming day at Whitecliff. PRE-ORDERS ARE CLOSED!! It’s our first pop up since November 2023! You can find us Friday April 24th from 11-3 and Saturday April 25th from 10-2 inside the dreamscape that is @sweetmaresas . Things are going to be a little different this time around - less pop ups, but more catering! One of the biggest changes you’ll see is the size of the sandwiches. We all know cost of ingredients have gone up in our homes and in foodservice. Instead of selling $17 sandwiches, I’ll be making them a little smaller than before. Previously all sandwiches (except the Chickpea) were on 6x4in focaccia slices. Now they will all be 5x4in, or the size of the Chickpea Salad Sandwich if you ever had one. Howeverrrrrr if you order from our catering menu (which I will be sharing soon) we will have the big ole sandwiches because one half is perfect for a party plate full of other tasty food. Listen, at the end of the day all I want to do is feed people. I think we should all have access to delicious & nourishing vegan food. I want to do a pay what you can pop up later this summer, and one day I would love to have a pay what you can deli or restaurant. In the meantime I’m grateful to continue working for the @happycartvegan , a free vegan food program sponsored by the @instituteforanimalhappiness . I want my food to show folks that you don’t have to consume or harm animals to eat seasonally, locally, or delicious(ly?). We do not need to accept oppression and exploitation on our plates, in our food systems, or anywhere in our society. Dear community: We are busy bees, food prepping away at @old_dutch_church_kingston ! Today, we are serving Chef Gabrielle Grigoli’s delicious, fresh Pasta Asparagus Salad full of fresh herbs, veggies, white beans and with a lemon Dijon dressing… and we will have a limited amount made with gluten-free pasta for the GF folks too! We start serving at 4:30, and go til 6:30 (or until food is all gone but we are making a lot!) Tables indoors or Commune with spirits at the picnic tables outside… @happycartvegan is a free vegan food and education program that will be at Old Dutch Church - 272 Wall Street, Kingston - every Wednesday! Hi friends! We are so thankful to announce that the The Happy Cart Free Vegan Food Program is returning! We begin our FIFTH beautiful year of free vegan food offerings next week - on JUNE 11TH. Mark your calendars & come enjoy some free delicious and healthy eats with your community! Some more exciting news & changes: this year, we are serving out of Old Dutch Church! @instituteforanimalhappiness is so excited to add @old_dutch_church_kingston as a partner. They join us & our longtime program partners - @nyfanimalsave , @peoplesplaceuc and @lanternpm (provider of great free books) - in this mission to help people have access to food that is gentler on the earth, addresses cruelty to non-human animals in our food system, & uplifts human health and spirit in so many ways! Being at Old Dutch Church means we also can provide seating both indoors & outside (picnic tables) ever week, so there’s no need to eat & run… though To-Go containers will always be available and we encourage you to bring your own container too. And in other great news: this year the chef for the program is Gabrielle Grigoli of @gabsvegtable ! Gabby has been a supporter of The Happy Cart, literally volunteering on day 1… needless to say we are so psyched we will get to see more of this force for good & creator of absolutely delicious, nourishing foods! Brought back the classics for a special little baby shower for one of my bffs. Honestly didn’t think I would miss making phony bologna but I do! For those of you wondering what’s up with GVT, I’m back in the HV full time working for the fantastic folks over at @littleloafbakeshop . Pop ups are still on hiatus, I’m open to small boutique catering as long as it lands on one of my days off lol. Maybe some events later in this year once we find an apartment and stabilize our lives a little bit. But I’m dreaming up some big plans for next year, taking all the lessons I learned from our three years of hustling and trying to turn it into something sustainable for all of us. Over the last few months, we’ve been developing an expanded food program for our new space, built on the foundation that Matt (aka @glennecho ) built over the last two years at @pkunderwearfactory . To bring this vision to life, we’ve enlisted the help of two friends, Chefs Gab Grigoli (of @gabsvegtable ) and @chef.d.sause (vegan chef/restaurant consultant) to round out the menu with additional sandos (on our house-made breads), healthy grain bowls, and figure out our kitchen flow. You’ll see both of them in the kitchen with us for the next few months so say hi! And quickly, back to Matt—he will be stepping into a full time kitchen role at our new location. So, while you won’t see him at the register anymore, you will see him running around the bakery and kitchen. :) The energy that Matt, Gab, and Diana bring to the kitchen is something so, so special, and we feel so dang lucky to work with them. Anyone who steps into the orbit of the kitchen is for sure going to catch a contact endorphin high (Is that a thing? It is now!). Read more in the link in bio! Some food I’ve been cooking lately: 1. buffalo tofu lettuce cups, crispy, crunchy, and a lil spicy 2. grilled polenta and eggplant with homegrown basil 3. & 4. a smoked tofu beach sando with marinated mushrooms, olives, onion, eggplant spread, bell peppers, and romaine on semolina 5. more buffalo tofu bc it’s my jam 6. naked crispy fried tofu 7. more lettuce cups! Three Cup Tofu with cilantro and shredded carrot 8. the bottom half of a late summer camping sando, with grilled eggplant, fried tempeh, charred broccolini, finished with balsamic onions, and cashew ricotta 9. grilled tofu with gremolata A little update - I’m based in New Jersey for the time being, with a few visits planned back to the Hudson Valley this fall. Part two of our road trip camp kitchen pictures! Big ups to my guy @onaswarm for doing the majority of our dirty dish washing, sorry I made so manyyyyy 1- dried beancurd ā€œchicknā€ tacos w mushrooms and cabbage on the Kern River in CA 2- frying the beancurd, pre tacos 3- chickpea mushroom sweet potato hash by ted 🄰 4- more tacos! This time nopales with as much cilantro and cabbage, outside of Reno NV 5- mango soy curls, sesame ginger brocc, brown rice, in Hat Creek CA 6- a cold soba tofu chili crisp salad for lunch 7- channeling @u_rugula for our first wedding anniversary in the redwoods - grilled baby ceaser w chickpeas, cheezy gnocchi, broccolini 8- udon noodles, baby corn, bok choy, soy curls and more 9- somewhere in Oregon our favorite breakfast (would love to know how many gallons of soy milk we drank over the trip lol) 10- another post hike lunch of refried beans wraps and veggies in yellowstone
