Ramen has had a long and delicious run. Now, teishoku—a set tray, six elements, rotating monthly. Same instinct as the ramen project: one format, deeply explored, slowly evolved.
May’s tray:
Grilled wagyu, aged tare, purple mizuna, rice
Tuna sashimi, lime miso
Tamago tofu, soy
Sesame green beans, chargrilled spring onion
Seasonal pickles
Ushiojiru (fragrant fish bone broth)
