Dessert of oxidised pear with artichoke, sandalwood, and vetiver.
First introduced in autumn to express the season through flavours not usually associated with it. The starting point for the dish was unusually defined by what @simon.martin.mana didn’t want it to taste like.
The response from guests led us to keep the core structure and techniques in place, while allowing the ingredients themselves to change. Over time, the serving became less of a seasonal course and more of a framework for continual change.
We expressed our commitment by asking @fridacooper to create a bowl specifically shaped around the dessert, designed to hold the structure in a way that guides the guest to experience each layer as intended.

It’s May Mud Club today!
In this session we are going to be processing and making with clay harvested from @northernrootsoldham in Oldham. Since working with this natural clay I’ve come to love showcasing the variety of iron oxides while processing and how its durable qualities are great for practicing hand building techniques.
