It’s funny what catches the imagination… A simple but surprisingly popular one, this. A blend of chestnut and field mushrooms, folded with cream cheese and a touch of clotted cream, garlic, and freshly snipped chives and parsley, herbs grown by my Mum, no less. Served on @pollenbakery sourdough toast with a generous spread of Welsh butter. It’s quietly become the biggest seller on the menu, which still catches me off guard every time! Just like Bertha®, but less layers — so he’s smaller, more suited to a single (still massive) portion, and just over 30% cheaper. We’ve teamed up with @pollenbakery , a Manchester institution, and creators of Croissant Butter®, which might just be my favourite spread of all time. This iteration of Bert® and Bertha® features a sensational brown butter cake, with layers of caramelised white chocolate & Croissant Butter® ganache. It might just be my favourite of all the cakes we’ve ever done, and we’ve done a lot, over the years. It’s caramelly, almost malty, not too sweet, a tiny bit salty, and just wonderfully indulgent. I’m almost scared to say this, but it’s like a better, more grown up, elevated version of Biscoff. You get a little pot of toasted croissant pieces in the box too — you can sprinkle them all over the place (and even the cake if you fancy it). I’m underselling the croissant pieces, but they’re unbelievably moreish, and you’re gonna end up wanting to order them on their own. They just add a lovely crunch to the ordeal, and reaffirm the whole croissant situation. Remarkable. Anyway, we’re launching this, along with the rest of our “Coffee Shop Collection”, which features both White Mocha and Matcha lineups, on Thursday the 9th of April at 7pm sharp. GB
