One of my favorite pies I’ve made in a minute - sausage and onion is such a classic combo for me. Using bufala mozzarella was a massive upgrade in terms of texture and appearance. I had been dragging my feet on making sourdough, mostly because of how intimidated I was by the process. It’s no joke: 2 weeks to get a starter going is a bit more foresight than I’m used to but it’s pretty cool to see the patience and effort yield some great results. Fun one from earlier this week: Chili Verde Detroit with masa infused dough, pickled onions, and cilantro. I always loved the idea of Mexican inspired toppings on a pizza but it felt wrong just topping a regular dough with them. Since I was recently gifted a tortilla press and had masa on hand, I replaced a small percentage of the wheat flour with masa. Combined with some chili verde I made the night prior, the result was super tasty and cohesive. Mark your calendars! I’ll be making Sicilian pizzas for y’all on Sunday November 2nd. For the unacquainted, Sicilians pizzas are a fixture of northeast US pizza shops. They are sliced as squares and are light and crunch with a heavy dose of toppings - by far one of my favorite pizza styles.
