This ramp kumquat smashed gimlet shouldn’t taste this good… but it does. I foraged these ramps upstate and brought them to Chef John @fandbar a hidden speakeasy in NYC. Instead of leaning into the garlic, he used the foraged ramps to bring out the sweetness in a spring gimlet and it works. NYC Hui’s for Hawai’i was a smashing success of aloha and delightful food and friends, all to help those in need that have been severely impacted by the floods. It was an absolute joy to see everyone of you gather together to do something good and Pono for the islands. I am so blessed to have such great chefs in my life! Thank you for all you encourage me to accomplish and all the support. Thank you to @dipahalderstudio for the flowers and ambiance that made our night so memorable. Along with @itsginabruno and @thisisfrankshouse for dedicating the space to produce and host this epic evening.
