Copenhagen just got a mega-bar with a “triple-format” menu. Every drink at @alexandrahus__ is available in three versions: classic, low-ABV, and non-alcoholic.
They’re launching with solid non-alc cred, too. @ishspirits founder @mortenleesorensen is a part owner.
The bar’s core concept: ABV optionality. @malthegeppel , of the @eveworld___ hospitality collective behind the bar, reports guests moving across ABV levels within a single visit. This behavior extends duration and order frequency, the on-premise metrics that matter most.
For non-alcoholic beverage brands chasing on-premise placement, the model removes the implicit hierarchy that positions non-alc as the fallback. Taste- and craft-forward positioning are critical, rather than leading with the absence of alcohol.
(As @seedlip_ben told @thedryatlas back in 2023: “if you’re building a brand and the ABV of your brand is a core part of your name or your packaging—dangerous red flags. I’d be starting to re-think that.”)

As we head into summer and things start to pick up, we’re looking to grow the team.
At EVE, we’re hiring across different roles. Our venues are open from 16:00 until late, almost every day of the week, so there’s room for both part-time and full-time profiles.
Behind the scenes, we prioritise community just as much as service. Expect weekly activities like sauna sessions, reformer classes, museum visits, movie nights and more.

We look back on the past few months with great pride, as we have now officially opened @alexandrahus__ .
We started the year by celebrating our team from @pool_cph and @bodegadanza with a late Christmas party and award show at @locale.21

To find the right inspiration for Alexandra and what comes next, we took a trip to NYC - exploring trends in hospitality and continuing our ambition to build spaces that feel authentic in our own city.
Shortly after returning, we began the hiring process, and today the EVE crew has grown to well over 100 people. It’s surreal to think about, considering we were just two people this time last year.
During the quarter, a national election was called, which made us slightly uncertain about how much attention we would receive in the press around launching our two new venues. But our core belief - making no and low alcohol options more accessible, combined with a more conscious and social way of going out - found its place in the conversation.
Many of you have told us that you enjoy following our journey - from concept development and design to rebuilding, and everything in between, from spiritual healings to figuring out how to source 150 chandeliers from DBA. We’ll do our best to keep sharing.
At the end of January, we set an ambitious deadline to be ready to welcome guests at Alexandra before Easter. A huge thank you to everyone involved in demolition, concept development, hiring, and building everything from the ground up. We’re incredibly proud of what we’ve created.
None of this happens without the people around us. You make it worth getting up every day and keep pushing us forward.
There’s a lot of new experiences coming in 2026 at all venues - and we can’t wait to share it with you.

Jeg har glædet mig til at kunne dele, at jeg er startet som Commercial Manager & Partner i @eveworld___ sammen med @malthegeppel , @christopherlyngbye og resten af teamet.
Vi har arbejdet sammen før, kender hinanden godt og det, de har gang i, var jeg aldrig i tvivl om, at jeg gerne ville være en del af.
Jeg har længe haft en ambition om ikke kun at være med til at skabe stemning, men også en dag at åbne mine egne steder og bygge dem op sammen med de rigtige mennesker.
Derfor var beslutningen egentlig ret enkel, da muligheden opstod for at joine EVE både i hverdagen og som partner i gruppen. Jeg så mig ikke tilbage.
Jeg har haft mange gode år i den her branche, men det her føles anderledes. Det har været længe undervejs og ærligt talt også en beslutning, jeg har tænkt meget over.
For mig handler det ikke kun om et nyt job, men om et skifte. Et sted hvor jeg kan bygge noget op over tid, tage ansvar og udvikle mig både professionelt og personligt.
Det føles som det rigtige tidspunkt i mit liv til at tage det næste skridt.
Jeg glæder mig virkelig til det næste og til at dele mere om alt det, vi har i pipeline.
THE IMPACT OF SCENT 🕯️Something that stayed with us after our trip to NYC was how places smelled and how they made us feel. A calming scent can alter an experience, create comfort, and quietly set the tone for how we behave in a space.
We visited many stores and galleries that had incense as part of the experience design, cleansing the air, shifting the energy, and subtly activating the senses in a way that elevated the whole visit.
Bars and nightclubs aren’t usually known for their scentscapes. Often it’s more of a ‘non-scent’—a blend of materials, people, and a hint of sweetness from the bar.
But what happens when scent becomes intentional?
Atmosphere is everything in a bar, and smell is one of the strongest emotional triggers we have. That inspired us to rethink the sensory experience at our venues and ask: How can scent support the feeling we want to create?
From now on, you’ll notice the scent of Palo Santo ("holy wood") at both @pool_cph and @bodegadanza —a calming, uplifting note that helps shape the atmosphere we aim for.
Because the best experiences engage all the senses.. also at bars! 🍻

Now we’re home with plenty of fresh ideas to bring into our venues in Copenhagen.

Ending this year with big news!
After 14 months of negotiations, we’re finally taking over our new venue.
We’ve acquired the historic Alexandra Theatre in the center of Copenhagen. A space that lived from 1924-1981, and later home to different nightclubs.
Big rooms. High ceilings. Lots of history.
And soon, our largest venue for entertainment.
See you in 2026.
