You know how much you all love our cosy winter stews⌠and the time has officially come.
Weâre teaming up with @everynightoftheweek for a special pop up, taste testing recipes from her beautiful book âTenderâ then serving dishes from the book every Wednesday for the next month. Maybe even longerâŚ.
Hands up who has more than one Motherâs Day breakfast with classroom tours inc P&C canât say no stalls to attend tomorrow plus some post production to complete, a catering job to prep for Saturday, and 3 different sports to attend then a job to quote and a reel to finish for a collab, a pop up dinner to promote, a ghost buster outfit to prepare, a site visit to get to, an event to prep for and assembly to attend (AND WATCH!) then a 2 day shoot.
What day is it where am I what do I do again?!!!!!

Butterflied chicken roasted over a bubbling, spiced tomato situation is one of my all-time
favourite ways to cook. The sauce braises underneath while the skin gets deeply golden
on top. The whole tray smells absolutely ridiculous in the best way possible. Then you
throw together a quick little olive and herb salsa on the side and suddenly itâs a whole
thing.
For this one I used Ardmona Thick & Rich â itâs got tomato paste already built in so you
get that depth and body without any extra work. One tin, maximum flavour, very little
effort. Serve with a big dollop or yoghurt Parmesan mash to mop up every last bit of that sauce.

Recipe below (doubled for this reel!)
Ingredients
2 tbsp olive oil
1 tsp smoked paprika
1 tsp sweet paprika
½ tsp ground cumin
½ tsp dried chilli flakes
½ tsp ground coriander
½ tsp dried oregano salt and freshly ground black pepper
1 whole chicken (about 1.5kg), butterflied (see Hints)
4 garlic cloves, thinly sliced
1 red capsicum, sliced into thin strips
1 yellow capsicum, sliced into thin strips
1 long red chilli, cut in half (optional)
1 brown onion, thinly sliced
1 x 400g tin Ardmona Thick & Rich Classic tomatoes (with tomato paste)
100ml dry white wine
100ml chicken stock
1 bay leaf
1 tbsp red wine vinegar crusty bread or fries, to serve
Simple salsa salad
1 handful black Spanish or kalamata pitted olives
1 tbsp capers, rinsed
1 tbsp roughly chopped fresh oregano
15g roughly chopped flat-leaf parsley leaves
juice and zest of ½ lemon
1 small garlic clove, crushed
2 tbsp extra-virgin olive oil salt

had something like this at Harry
âs Bar in Venice and it has lived rent-free in my head ever
since. Barely touched, just assembled with care - garlicky tomato baked until bubbling, a
beautiful piece of barramundi nestled in, pasta tossed through the whole glossy situation.
Done in 25 minutes. Feels like a million bucks.

If youâre ever faced with a giant chicken and your fan is broken in the oven ⌠hereâs how I roast it.
preheat the oven to 240°C with the oven rack on the second to lowest setting or track
Squeeze lemon juice all over the chicken to tighten the skin.
Salt and oil the chicken all over.
Oil the roasting pan and preheat it in the oven.
Place the chicken breast side down onto the hot pan and into the oven for 25-30 minutes.
Remove The Chicken and turn it breast side up.
Turn the oven down to 170°C.
Put the chicken back into the oven for a further hour.
removed from the oven and place the chicken on a warm platter and cover with foil.
place the rest in pan over heat and add some white wine shallot time and stir over the heat.
Once it simmers at a tablespoon of butter and the juice of half a lemon and continue to stir to emulsify.
Carve the chicken and serve with risoni pasta bitter greens fried in garlic with lemon zest olive oil and salt and lots of juice from the pan.
