Secondo Laura Ballini, chef per Esperito #4, il riso è “un ingrediente versatile e leggero, capace di trasformarsi in creazioni liquide e vaporose, sorprendendo in ogni piatto. In questa edizione, diventa anche ponte culturale, un omaggio alla filosofia taoista, dove semplicità, equilibrio e armonia guidano ogni gesto e sapore.
