Southern Song lady serving tea
In the Song dynasty (960-1279), people prepared and drank tea using a method called dian cha (Chinese: 點茶). Tea was made into tea cakes and ground and sifted into fine powder before drinking. Then people slowly mix water with the tea powder, and use a whisker to whisk the tea mixture. The froth, colour and patterns formed by the whisked tea were aesthetically important for the elites and whisking was considered a gentleman‘s skill. The whisked frothy teas led to the rise in popularity of dark patterned bowls in which the texture of the thick whisked tea could be more easily judged, as the white froth contrasted more easily with dark bowls. This method of tea making spread to other Asian countries, including Vietnam and Japan. The Japanese matcha making derives from dian cha.
