Castelfranco dressed with fresh grape juice from @samuellouiswines and hazelnut oil. Layered with tasty @incontrocured culatello, poached quince, shaved @stepladdercreamery cheese, and lots of Olorosso Sherry.

Fried California veal sweetbread salad with bluefin tuna tonnato and all of the awesome chicories and greens.
Pro tip: If you hide the sweetbreads and tonnato underneath the beautiful market greens and radishes; the calories don’t count.
Pâté en Croûte
@corvusfarm guinea hen and @ranchollanoseco pork lardo. Served with a dollop of apple remoulade and dandelion greens. It most certainly does not suck
