Don Lee’s (@donbert ) breakfast-inspired modern classic, Benton’s Old Fashioned, features bacon and maple syrup and first introduced the fat-washing technique to the cocktail world in 2007. The Old Fashioned twist has been a mainstay at @PDTNYC , its birthplace, ever since. Recipe link in our bio.🥓🥃💫

The thing I’ve learned from the Cocktail Apprentice Program is that most important mentorship is the kind that happens between peers. The folks you surround yourself with every day have a bigger influence on you than someone you look up to that you don’t see as frequently. Being a mentor doesn’t require having more experience or success than your mentee. Peers that acts with intention to shift the culture for the better are the most important kind of mentors we need right now. Don’t wait for a leader to show you the way, be a mentor for your peers while also learning from them as a mentee. My greatest mentors have been my fellow CAPs. ❤️🍍

Sadly Existing Conditions will be closing permanently due to the ongoing global pandemic. It has been an honor to work with everyone on our team and to serve the many folks who came to visit us. Please stay safe and healthy through this dark time, I look forward to raising a glass with everyone once there is a vaccine.
The last 12 months has been the best and worst year of my life. I opened @exconditions s with the most amazing team of folks I've had the pleasure to work with, got married to the love of my life, was diagnosed with cancer, and was put through the ringer fighting it.
Last Nov I went to my doctor thinking I had bronchitis and discovered than I had a 17cm tumor in my chest. I would learn that I had stage 4 Thymoma, a rare cancer with less than 400 cases a year in the US that ironically is very easy to explain to folks in the hospitality industry as it is a tumor in the Thymus aka sweetbreads, perhaps karmic retribution for my love of all things offal.
Since then I've had 5 rounds of chemo, a surgery to remove the most tumor along with most of my right lung, another surgery 2 days later to remove the rest of the tumor by cutting into my heart to rebuild my superior vena cava with gortex, and 28 rounds of radiation that ended today. (Just in time for me to fly down to @tales_of_the_cocktail tomorrow.) Now I need to finish healing and wait for CT scans every 6 months for the next few years to see if I managed to beat cancer.
Throughout this ordeal more than anything I've learned how much I have to be thankful for. My amazing wife who not only held my hand through every treatment but took meticulous notes and fought to make sure I would receive the best care. The outpouring of support from my family and community to both lend a hand whenever needed as well as remind me to prioritize my health when I tried to keep working. Access to cutting edge care from the most experienced cancer doctors and nurses in the world at Memorial Sloan Kettering Cancer Center.
I'm looking forward to seeing everyone in Nola but will be keeping a low profile as I'm still recovering from my treatments and won't be drinking due to the numberous drugs I'm still taking. If you see me please give me a high five/fist bump and be mindful of the fact that while I might appear "normal" I am actually still quite fragile at the moment and even lose my breath easily just from raising my voice in a noisy room.
