On Tuesday, 31st of March we are extremely happy to welcome at @chambers.nyc thanks to our friends at @dnswines@dionysigrevenitis , a vigneron who plays a big part in putting back Greece and its incredible heritage on the world wine scene : @christoszafeirakis . You may have not heard of him, but Christos is now crafting some of the most delicate and compelling reds coming from the country, thanks to a beautiful, rare grape variety, Limniona, he helped to save from extinction. On the foothills of Mount Olympos, @domainezafeirakis is farming biodynamically 12 ha of vines around Tyrnavos, highlighting the potential of Thessaly and its terroir. This is the historical area for Limniona, a thick-skinned, high-acid grape who needs warm days and cool nights to express its full potential, and joining the league of great Nebbiolo and Xinomavro wines. The touch of Christos in the cellar, looking for gentle extraction and aging justify wines he is today the master of this grape. During this dinner you will be able to enjoy different interpretations of Limniona through multiple vintages, and be on the pulse of one of the most exciting projects in Greece~!
