Fermented over 36 hours using our in-house culture to create a softer, rounder expression of coffee while keeping the profile clean and flavour-forward. FERM 008 leans deeper and more familiar, finished with a savoury peanut butter probiotic foam. FERM 009 carries a brighter, fruit-forward acidity shaped by strawberries during fermentation, layered with a honey salt probiotic foam. A Ferm believer: Dylan Tan @dylanxaviertan @dilly___deli #gutfilledclearmind A headhunter in the day, a coffee roaster at night. Most of Dylan’s days revolve around conversations, calibration, and understanding people. His nights are not too different, just through coffee instead. Which is why FERM 008 and FERM 009 felt familiar to him almost immediately. Not because they taste like traditional coffee, but because they carry the same intent behind them. 36 hours of fermentation. Living cultures intact. A softer acidity profile. Coffee approached through fermentation rather than roast alone. A different expression of coffee. Still flavour-forward. Still process-driven.

@dilly___deli @drinkferm FERM 008 — 36HRS FERMENTED COFFEE FERM 009 — 36HRS FERMENTED STRAWBERRY COFFEE 16 05 2026 23 05 2026 No scoby or tea were used in the making of this Ferm. Both drinks are fermented in-house using a ginger bug culture before being built around coffee. Over 36 hours, the process softens the acidity and develops a profile that feels rounder, lighter, and naturally alive with living cultures. FERM 008 is paired with a peanut butter probiotic foam. FERM 009 is finished with a honey salt probiotic foam.

Still buzzing from this one 🐝 Our first-ever overseas pop-up, and it couldn’t have felt more at home thanks to our friends at @walnutscoffee in Tokyo. From the first pour of coffee by @dilly___deli to the last bite of sandwich – the same familiar Hideout taste, just a little further from home. Shoutout to everyone who came through, old friends and new 🫶🏻 Feels like a first step… maybe more to come 👀

Festive Weekend Market 2025. We close the year with a familiar warmth, filling the final weekend of November with colour, craft and the easy camaraderie of makers and friends gathering once more. N.O.M. Pottery presents new ceramic works shaped by texture, memory and music. TANCHEN Studio will showcase functional textile pieces and launch new bag charms alongside favourites such as the B/B Cupholder and Yin Yang Placemats. Dilly Deli joins us with specialty coffee, bakes and sandwiches. Art Again curates a wall of collectible artworks ideal for gifting, while Micasa Fucasa offers vintage rugs with history woven into every thread. Museum Gift Shop introduces a new gathering of evergreen makers this season, including the one-of-a-kind shawls of Tamaki Niime, the subtly expressive stencil-dyed washi pieces from Keijusha, and the delicate porcelain pendants crafted by Tobimatsu Toki. Moving Units Systems will present prebuilt configurations made from pre-owned USM Haller components, ready for cash-and-carry. Alongside these, a thoughtful array of festive hampers and a selection of showroom pieces will also be available, offering moments of discovery throughout the space. See you then!
