Diego Huillca Santacruz was born in Acomayo, Cusco. He grew up among mountains until the age of sixteen, with that blend of earth, sky, and river that forever marks those who come from the provinces. Later, he studied Business Administration at the Andean University of Cusco. Everything seemed to point him toward a formal life, a secure career. But coffee called louder. While studying, he worked in customer service. There he discovered that his gift was not just serving a table or attending to someone—it was connecting. The first café where he worked was La Bondiette. He learned a lot there, but he also felt he had hit a ceiling. His heart was asking for more. So he took a risk and tried other paths. At an ice cream shop, he encountered specialty coffee for the first time. That was where he met Frank That meeting was a spark. Soon after, he met Neto and Iván, who would later become his brothers in life and in coffee. Together they began to travel, to visit coffee farms, to spend hours with producers, learning the true language of the bean. Santa Teresa, the farms, the fields, the campesinos—all of it opened their eyes to a bigger world. Before even thinking about opening Three Monkeys, the three of them worked a year behind a bar, learning from the ground up. And it was there that certainty was born: they had to create something of their own. Diego remembers it clearly: “Our greatest weapon was that we had nothing to lose.” With that conviction, Three Monkeys was born—today one of the 100 best cafés in the world. But Diego didn’t just find a future in coffee. He found an art within the art: latte art. For years, he has dedicated himself to it with surprising passion. What seemed impossible for others felt natural to him. He studied the designs from international competitions and replicated them with ease. What started as playful practice soon became a serious pursuit. Now he dreams of training in Australia alongside Victor, a national champion, to prepare for the world stage.
