Over the years I have come to know Chef Gresham Fernandes @greshamfernandes my admiration for the man has only grown. Not only does he create some absolutely banger dishes - bold and flavourful - he speaks straight from his heart. From conquering my fear of heights by attempting to climb a 40 meter high wobbling staircase to taking a thrilling helicopter ride and a hot air balloon ride over the AlUla desert to exploring the UNESCO World Heritage site of Hegra and walking amidst its 110 preserved tombs, AlUla was one big adventure! As a keepsake, I also got my name carved in the ancient Arabic language Dadanitic on stone. Kesar Bagh for Elle Gourmet ✨️ “You can’t find good dairy here, the meat is inconsistent, and the Basmati rice? It’s practically non-existent.” Chef Azaan Qureshi isn’t being cynical when he says this; he’s being a realist. We are sitting in the breezy courtyard of a restored 200-year-old Portuguese villa in Assagao in Goa – the kind of space where you expect soft Pois and vindaloo, not the rigorous, perfume-laden discipline of Awadh. Azaan, the third-generation torchbearer of the legendary Qureshi clan, admits that bringing Dum cuisine to Goa for the newly-opened Kesar Bagh was a “kick” precisely because it felt impossible. From introducing his own rice vendors to the local market to sourcing saffron and Gucchi mushrooms directly from Kashmir, he’s refused to dilute a single drop of his heritage. Talking to him, you realise the stakes are personal. Bringing Dum cuisine to Goa isn’t just about expansion – it is about proving that the discipline of his grandfather, Padma Shri Chef Imtiaz Qureshi and father Gulam Moinuddin Qureshi, could thrive even in a landscape disconnected from its roots. As much as this is an appreciation post for Nadoo - a dining destination which is clearly defying our idea of South Indian fare in Delhi - it is also one for Chef Shri Bala @chef_shri_bala I first met the chef, who has moved bag and baggage from Chennai to make Delhi her home, just a week ago at an art event. There was something so refreshingly charming about her, that it felt natural to be drawn into her circle. Very graciously, she offered me a lift till another destination and we spent the next half an hour bonding over all things food, Delhi and even politics! The reason for this backstory lies at the very heart of Nadoo. It is the same grace, warmth and love that she has poured into this beautiful space and into the dishes, which bring together the culinary traditions of the five Southern states through dishes rooted in memory, heritage, and technique. There are enough reviews online talking about the spices, the textures and aromas of the delicious and delightful fare, so I won't delve much into it, except to say that one should definitely not miss the Pomfret Fry, the Prawn Ghee Roast with idiyappam and the Idli Churros on their menu. That tiny cooker with a sorbet placed inside needs no introduction. Loyal patrons of Indian Accent will instantly recognise the refreshing palate cleanser served between different courses. On a Saturday night, the restaurant was full when we visited to try the Chef's tasting menu - testimony to the consistency and standards set up by the fine dine establishment in its 17 years in the capital. Under Chef @shantanu.mehrotra , the summer menu paired with wines, was innovative and there were many times during the meal, that I had a wide smile on my face - and no, it wasn't because I had way too much wine :) The standout dishes include the potato chaat with an aloo tikki foam, chicken keema roulade, pork belly tikka, duck biryani and the manam chocolate cake with basundi and berries. And of course, the Chef couldn't let us leave without serving their famous Daulat ki Chaat. Before the meal, we popped Upstairs @upstairsatindianaccent for a quick drink but missed meeting @varun.mixologist who along with Chef @hiteshlohat has turned this new space into one of the most talked about recent openings in the city.
