In Baja, Drew Deckman cooks like a myth. A bearded desert viking in a cloud of meatsmoke with goggles and tongs over live fire. Now, at Deckman’s North in North Park, he’s doing the same, just with a little less dirt under his fingernails or meatsmoke in his hair.
He trained under the best—Paul Bocuse, Jacques Maximin, and his mentor Madeline Kamman. He was in charge of Restaurant Vitus in Germany when it earned a Michelin star. But he found his calling when he ditched it all and started cooking on a Mexican fishing boat.
