FROM YANGON TO MUMBAI Embark on a Burmese Culinary Odyssey This April, as Thingyan, the Burmese New Year, ushers in new beginnings, By The Mekong at St. Regis Mumbai transforms into a vibrant dining experience as Chef Phyu Cyn, Myanmar’s celebrated Chef Goo Goo, takes over for an exclusive two night showcase on April 17th and 18th. Known for her ability to weave emotion and heritage into every bite, Chef Goo Goo brings the soulful spirit of Burmese cuisine to the table, blending authentic street style flavours with a refined global touch. From tangy tea leaf salads bursting with history to comforting bowls of mohinga steeped in tradition, every dish tells a story of compassion (‘mettā’) and intention (‘cetanā’), philosophies central to her craft. Shaped by her upbringing in Yangon and stints across Bangkok and Paris, Goo Goo’s dishes are both nostalgic and progressive, a delicious convergence of heritage and creativity. This sensory experience is brought to life in collaboration with Dean With Us, helmed by Akanksha and Rupali Dean, renowned for curating unique cross cultural dining narratives. Paired with St. Regis Mumbai’s commitment to culturally rich and immersive events, this pop up is more than a meal, it’s a joyous celebration of Burmese flavours, culture, and the spirit of Thingyan.

TASTE OF SAIGON COMES TO MUMBAI Anchoring the experience is Thep Dinh, Bar Manager of Stir and Co-Founder of Savor Cocktail Club, widely regarded as one of Vietnam’s most influential bartenders. A World Class Diageo Vietnam Champion (2019) and Vietnam Bartender of the Year (2019 & 2023), Thep brings his signature Symposium philosophy to Mumbai, shaping an immersive bar takeover rooted in modern mixology and creative expression. Joining him behind the bar is Sameer Shaw, Head Mixologist at The Penthouse, who adds a locally rooted perspective through refined technique and thoughtful execution. Complementing the cocktail program, Head Chef Nhan Ngo will curate a thoughtfully designed Vietnamese menu in a four-hands collaboration with By The Mekong’s Head Chef Li Qiang.
