This Peru-meets-the-Philippines tasting menu is highly recommended. Chef Kevin Uy returns after five years at Central, where he developed a deep respect for ecosystems; learning to see every part of an ingredient, from shell to stem, as part of a larger system shaped by tradition and open to innovation.
What follows is a series of culinary biomes: coastlines, rivers, rainforests, mountains-translated onto the plate with precision, a certain playfulness, and a recurring acidity (which I feel is like why leaned into it a lot) each course moving between Peru and the Philippines with ease. It’s thoughtful without feeling heavy, technical but still grounded in flavor. It’s one of those rare tasting menus that held my attention all the way through.

There’s something quietly thrilling about this place—the way it resists being announced, almost as if it prefers to be stumbled upon rather than searched for. And that spoke to me as much as the Kapampangan food cooked with heart—which naturally was incredibly delicious.
