Has it already been a year? Here are some of the 10 best things cooked this year.
1. Ribeye with charred green onions. Not usually a steak cookin’ dude but sometimes it’s fun to ball out and put the carbon steel through the paces.
2. Sichuan eggplant with ground pork. Peeling and coating the eggplant in starch before frying gave it a delicate texture like poached fish.
3. Oven poached trout with brown butter and lemon over succotash. I finally learned how to carve a fish like a French bistro waiter.
4. Shrimp ‘n’ grits riff with leftover dashi stock. The speed to flavor ratio on this was off the charts.
5. Teriyaki chicken with iceberg salad and poppyseed dressing à la Du’s Grill. Nothing can top the magic of Du’s Grill, especially when you don’t own a grill (yet), but you can at least get kind of close with the salad.
6. Green chile cheeseburger with a 1:1 ratio of chile to beef made on a blackstone on loan from work. The blackstone is a burger lover’s dream come true and the results, the best I’ve ever made.
7. Shoyu ramen with pork belly. I used to think ramen was a near impossibility at home but apparently all it takes to make competent bowls is a healthy pantry. Although hard to overstate the different having easy access to H-Mart has helped.
8. Heirloom tomato salad with pistachio and yogurt. I can be pretty meat’d, but ya boy can do salads worthy of any influencer reel.
9. Baharat roast chicken, fall vegetables with tahini dressing and sumac onions. Sheet pan dinner that far exceeded the sum of its parts.
10. Crispy Cantonese pork belly spread. Hands down the best thing I made all year, and sure to be repeated many times. Served with crispy garlic yu-choy, cucumber quick pickles, sweet ‘n’ sour sauce, hot mustard and celery peanut salad.
Thanks for letting me share my love of cooking even if it’s only through a screen. Here’s to another year of overcomplicating things in the kitchen.✌🏼🌶️
