From the outside, people see sandwiches, bread, packed rushes, and busy stores. What they don’t always see is the person behind the scenes making sure everything, and everyone, is well-taken care of.
The early mornings, the late nights, the endless problem solving, the phone calls, the stress, the organizing, the comforting, the fixing. The way you carry the weight of this family and this business without ever asking for recognition.
BOSSA would not exist without you. Not just because of all the work you’ve put in, but because your heart is in every corner of this place. Your love, your toughness, your loyalty, your care for people… that’s the foundation this thing was built on.
You’ve kept us grounded through all the chaos, believed in us when things felt impossible, and reminded us every day what hard work and sacrifice really look like.
There will never be enough words to properly thank you for everything you’ve done for us, for this family, and for everyone who walks through our doors… but today we’ll at least try.

Veal Milanese
- 1 veal cutlet, pounded out & tenderized.
- 1 Cup AP flour, salt pepper.
- 2 Eggs, whole garlic clove, parmesan, salt pepper.
- 2 Cups Italian bread crumbs (idk if they’re store bought they remind me of childhood) extra parm, whole parsley.
Classic breading station, fry in olive oil until golden brown.
Bitter leaf citrus salad
- 1 head Radicchio
- Handful of arugula
- 1 thin sliced shallot
- Parsley & Lemon zest
- Orange juice, lemon juice, white wine & red wine vinegar, olive oil, dijon mustard, sumac, salt, pepper.
- Parmesan shavings.
Lemon Aioli
- 1 large egg yolk
- 1 small garlic clove, microplaned
- Juice & zest of 1 lemon, 1/2 at the beginning, 1/2 at the end to loosen the emulsion
- 1 tsp Dijon Mustard
- Salt & pepper to taste
- Start mix & slowly add 1cup of neutral oil.
Assemble your masterpiece & enjoy. Don’t forget to toast the buns

I’ve known @danlomanto since he was young, still figuring out what he wanted to do. Watching him grow into the owner of Bossa (truly one of Canada’s best sandwich spots) has been incredible.
Designing Bossa Dix30 was special.
We wanted to honour its Italian roots, rich burgundy tones, warm stone textures, and a space that feels as authentic as the food.
