Smoked Oxtail Lasagna Serves: 6–8 Cook Time: ±6–7 hours āø» Ingredients For the Smoked Oxtail * 2–3 kg oxtail * BBQ spice * BBQ rub * SPG seasoning (salt, pepper, garlic) * Cherry cola (for spritzing) āø» For the Braise * 2 cups water * 1 cup red wine * 2 tbsp soy sauce * 2 tbsp red cooking sauce * Oxtail stock * Extra BBQ rub * Cherry cola āø» For the Lasagna * Lasagna pasta sheets * BĆ©chamel sauce * Baby spinach * Gouda cheese, grated * Parmesan cheese, grated āø» Method 1. Season the Oxtail Pat the oxtail dry with paper towels. Season generously using BBQ spice, BBQ rub, and SPG. āø» 2. Smoke the Oxtail Set up your drum smoker for indirect heat. Place the oxtail in the smoker and smoke for 2½ hours, spritzing with cherry cola throughout the cook to build flavour and colour. āø» 3. Braise the Oxtail Transfer the smoked oxtail into an oven dish. Add: * 2 cups water * 1 cup red wine * Soy sauce * Red cooking sauce * Oxtail stock * A sprinkle of BBQ rub * A splash of cherry cola Mix everything together, cover tightly, and place the dish back into the smoker. Cook until the oxtail is completely tender and can easily be shredded by hand. āø» 4. Rest & Shred Remove the oxtail from the smoker and let it rest for 30 minutes. Shred the meat by hand, making sure to keep some of the rich braising liquid. āø» 5. Assemble the Lasagna Start by spooning some of the oxtail braising juices onto the bottom of a casserole dish. Layer in this order: 1. Lasagna pasta sheets 2. Shredded oxtail 3. BĆ©chamel sauce 4. Baby spinach 5. Gouda and Parmesan cheese Repeat the layers until the dish is full. For the final layer, add a generous amount of cheese to create a rich golden crust. āø» 6. Bake Place the lasagna into the oven and bake until: * The pasta is fully cooked * The cheese is melted * The top is golden and crispy āø» Serve Let the lasagna rest slightly before slicing. Serve hot with all the smoky, rich oxtail flavour running through every layer. āø» šŸ”„ Dali Tip: The key to this lasagna is the smoked oxtail juices — don’t waste them.
