Planting tomatoes isn’t what most people expect from a bakery—but it’s something I care about. There’s just no comparison between a fresh, juicy summer tomato and one that’s been sitting around all winter or trucked in from far away. For me, “local bread” means baked right here in Fayetteville in the morning and enjoyed the same day. But being able to grow some of what goes into that bread—right here, and even picking it the same morning—that feels like something special. If you want to follow along while these little seeds turn into something that eventually ends up in a Summer Caprese focaccia or a Tomato Basil loaf, stick around. I promise it’ll be worth the wait. I couldn’t stop thinking about it, so I experimented in my test kitchen, and fell in love! Golden baked Yukon Gold potatoes form the heart of this loaf, giving it a light, springy crumb and a remarkably moist texture. A blend of white and whole wheat flours keeps it airy yet nourishing, while herbs de Provence bring savory depth and aroma. Finished with a mix of seeds that bake into a beautifully nutty crust.
