Cornrow & Tenfold!!!
This Friday May 1st, we are launching a weekly pop up at @tenfoldcoffee in the Heights. This pop up will take place every Friday on the Tenfold patio, where we will serve breakfast tacos and breakfast sandwiches.
Expect a fresh menu of handmade corn tortillas, freshly baked sesame buns, smoked brisket, cheesy eggs, fried plantains, and more!
We're especially excited to launch our corn program weekly. We are cooking corn from scratch using wood ash from our barbecue for the nixtamalization process. We grind the corn in the @masienda Molinito and press and cook tortillas from there. It's a great way for us to continue to explore the Indigenous American side of our menu influence.

I served Jollof Grits at my very first pop up, and they are finally back on the menu 🥹 We're serving these with fried catfish (marinated in coconut and lime), broccolini, plantain, pickled onion, and cilantro chutney
Also, we are bringing back our Smoked Brisket Breakfast Sandwich! Brisket, egg, and cheese topped with avocado, fried plantain, and refried black beans. All on perfectly baked bread!

We cook Indigenous Soul cuisine. It's only right that we serve you a few dishes featuring native corn, with a soul food twist.
This week, we nixtamalized pink xocoyul heirloom corn using post oak and live oak wood ash, then we ground it using the @masienda Molinito.
On Sunday, this masa will turn into chilaquiles and sopes with a Cornrow spin.

Loaded Nixtamalized Sweet Potato Fries 🥲🔥
On the menu this Sunday at @thirdplacehtx !
We soak sweet potato matchsticks in an alkaline solution before parcooking and frying. This allows for a super crunchy exterior with a custardy sweet interior. These are not your average limp sweet potato fries, just listen for that crunch!
These come loaded with jerk BBQ sauce, ginger aioli, and pickled onion.

Curry Brunch Burger on the menu this Sunday at @thirdplacehtx !
We’ve been smoking a lot of brisket, so we have some wagyu brisket trim to process. We’re grinding it along with a bit of lamb for flavor, seasoning with our house curry powder and scotch bonnet sauce, then smoking those patties over post oak.
The burger is topped with lettuce, tomato, sharp cheddar, pickled onion, ginger aioli, and an over-easy egg. All on a house made sesame bun!
I genuinely think this is one of the best burgers in Houston. The meat is so flavorful and smoky, the toppings balance the heat and fattiness, and the house baked bread can’t be beat.

Masa Cornbread with Collard Green Butter
Takes me back to super buttery skillet cornbread we would eat hot off the stove with collard greens and fried chicken.
Loving the techniques here - nixtamalized corn using ashes from the barbecue, organic greens & pot liquor blended into good butter, and buttery cornbread in the cast iron.
