WILD Sips — Edition IX Toca da Raposa × Otro Bar For this edition of Wild Sips, we’re thrilled to welcome @lissbarq from Costa Rica! Architect, gastronomic journalist, and creative director behind @otro___bar , Lissa’s work moves between hospitality, design, and storytelling, shaped by her strong sense of style and attention to detail. Alongside Casa Escalante, the group behind projects like Isolina and Cantina La Buenos Aires, she has helped build a contemporary approach to cocktails and dining in Costa Rica. At @otro___bar her philosophy begins with looking at everyday ingredients like corn, coffee, banana, panela and salt and transform the familiar through technique, precision, and care. Their approach is minimal and intentional, focused on clarity of flavour, and balance rather than complexity. A massive thanks to @alanuresti.s and @thelostexplorer for their support once again! Lissa will be joining us throughout Wednesday to explore Monsanto, the local ingredients, and finish by taking over the bar for one special guest shift. Wednesday May 20th at Toca.

WILD Sips — Edition VIII Toca da Raposa × The Connaught Bar For the next Wild Sips, we’re honoured to welcome @giorgio_bar_giani . Originally from Pisa, Giorgio is the Assistant Director of Mixology at the multi-awarded @theconnaught in London and one of the most recognised names in the global bar scene. Since joining the bar in 2014 under the guidance of Ago Perrone, he has become known for his energy, hospitality, and thoughtful approach to creativity behind the bar. In 2023, Giorgio received the International Bartender of the Year award at Tales of the Cocktail’s Spirited Awards, while continuing to shape The Connaught Bar through creative projects, guest experiences, and collaborations around the world. Connection and hospitality, paired with his innovative yet refined and timeless style behind the bar are at the core of his approach.  A special shoutout to @monkey47 for helping us make this edition happen. Giorgio will be joining us for countryside exploring, idea exchanges, and building something together before taking over the bar for one memorable guest shift. May 19th at Toca. Don´t miss it.

WILD Sips — Edition VII Toca da Raposa × Wabi Sabi For this edition, we’re excited to be joined by two bartenders coming in from Paris. Both Portuguese, @leandro.jas02 comes from the Numbers and @_lianorpelaverdura from the Arts. Leandro hates broccoli and to walk barefoot and Sara loves cold pizza and dipping fries in ice cream. Up the sleeve they have all the savoir-faire from their day-to-day in Paris, spent between Bar Nouveau and Abstract Bistrot. On their solo project - @_wabi_sabi_collectif , however, they prefer to play some wild cards! They started this investigation almost as a playful experiment — an informal lab, (aka their kitchen) where they test ideas, cross-contaminate knowledge with sillyness. They love to ask questions that often don’t have immediate answers, or sometimes have multiple answers. That’s how they decided to take it more seriously, by sharing and discussing it with more people — people who will ask even more questions, lead them down new paths, or simply get lost in it together. They’ll be with us for a few days, exploring local ingredients and building their take along the way. A special thanks to @bacardi_angelsshare and @bombaysapphire for helping us make it happen. Expect bold flavours, fresh combinations, and a guest shift where you’ll try something new… Next week at Toca
