I feel extremely humbled for the amount of support and love I have received in the last week. I remember thinking about this moment so many times but never thought it was going to come true. My parents made so many sacrifices so I could chase my dreams and Iâll be forever grateful with them for trusting me. I am incredibly lucky to be part of a community that has opened the doors to me and has pushed me to become better every day. World Class has taught me to be kind, patient and more importantly to enjoy this beautiful industry. In this competition only one person takes the prize but there is a whole community behind each person who was won and I want to take a moment to thank every person who helped me to get where I am now. This industry can be really hard and I hope people can understand how much time and effort we put into this to make sure people leave with a smile even when we are not having a great day so hopefully I can motivate everyone to be kinder and empathetic to each other. I feel really privileged to represent Australia in the Global Finals and give my everything. The best is yet to come.. bring it on SĂŁo Paulo!

Act IV : The Sensory Reveal
Sometimes when a cocktail is stripped back and served this cold, the smaller details start to stand out more â the texture, the balance, and the way the flavours move across the palate.
For this serve, I looked at the cocktail through the 4Fs Fragrance, Flavor, Feel and Finish with @ketelone sitting at the centre of the structure. Fragrance
Lemon geranium and grapefruit keep the nose fresh and lifted, while the clarified guava brings a soft fruit note underneath. Flavor
Ketel Oneâs texture and subtle citrus character work really naturally with the guava, RHUBI and Oloroso, keeping the drink clean but still layered. Feel
I used a white chocolate whey to give the cocktail a softer, silkier texture on the palate without making it feel heavy. Finish
A small amount of verjus keeps the finish bright and dry, especially at a colder temperature.
The idea was to make something cold, refreshing and easy to drink, while still holding enough texture and structure to keep it interesting from start to finish.
For me, it captures that feeling of a late afternoon drink cold, refreshing and easy to settle into while the last rays of sun fade and the energy of the evening slowly starts to build.

Bit of a life update â Iâve joined Rhubi as a Brand Ambassador

Over the weekend, we said goodbye to our @condecoration .
A lot of tears, a lot of hugs, and a lot of reflection on the years weâve all shared.
