Two of our talented bakers are leaving us, we knew it was going to happen as Akiko is moving to another country and Pip is pursuing her career in nursing, still, we will miss them dearly and miss having their wonderful energy in the bakery.
We will be posting all about their times at Companio but for now, we thought this video shows what a Saturday afternoon looks and sounds like at our bakery.

Taking a moment to reminisce over our OG site in Ancoats, where it all started š
35 Radium street is the soul home of Companio since 2015, where we became a team, baked throughout the COVID lockdown, learnt from mistakes, came out on the other site as a stronger team and a community that supported us and still do through it all.
It is where we met some of our customers who turned into friends, customers who would stop for a coffee and chat after early morning dog walks, customers who would come to say hi after a night out on early Saturday bake shift, customers who would bring us ice cream during a hot summer day.
We feel very lucky to have this little corner in Manchester that gives us an opportunity to do what we love most and share it with the wonderful community in Ancoats and beyond.
We are finally able to refurbish the site, it will be re-opening from 29th of Jan to welcome you all, meanwhile please come and visit us at our NQ site on š60 Spear street

So thrilled to have been able to take the Companio Bakerās Dozen to Berlin last weekend
We all met early at @islacoffeeberlin for coffees and of course the bakers shared stories from each of our bakeries š
@albatrossberlin brought the pastries and baguettes on one of their fleet of cargobikes, several trips as there were many of them!!
Led by @tomreynoldswriter on a beautiful sunny morning, the runners did a half marathon of 3 laps around tempelhofer feld.
No time targets, a pace that everyone could enjoy, every lap met with pastries and coffee.
The finishers medal; a baguette tied with shoe laces from @4t2.run ! (which some already finished half of it before getting it home š«£)
A cracking day!

This month, it has been about the wild garlic at our bakery, we talk about it so much to our customers that some of them are so kind to bring us some from their garden or forage it for us when they out on their walks š
One of the delicious products that our bread team have prepared is the wild garlic, spring greens and walnut sourdough (VG) baked only on weekends throughout April as our Monthly Special Sourdough š¼

Toorshi ÜÜÜŖÜ«ÜÜøÜ
When I first attempted making something in the kitchen, I started with pickles. They have always been a staple on our table and at every Assyrian household.
Maybe it was the ease of the process that didnāt involve any cooking or my scientific background, that I loved to measure everything precisely and wait a few days for results!
This recipe is my mumās, she learnt it from her elderly neighbour while she lived in Iran as a refugee during the 80s. My mum tweaked it for years after she returned to Iraq as she couldnāt find any tarragon which isnāt common in Iraq, then she gave me the recipe 10 years ago.
I tried different vinegars, different spices and root vegetables (3rd & 4th photo) until last year I had the chance to prepare and make Toorshi with my mum and felt content š I wrote the recipe and decided to make them at our bakery and have a chance to share them with our team and customers.
In short, a jar is full of carrots, cauliflower, Jerusalem artichoke, tarragon, garlic, turmeric and vinegar. A jar of tangy deliciousness and crunchy veg that can accompany any meal šš½

OG COMPANIO GETS A NEW LOOK š„
No oneās really going to fight you if you say that @companiobakery is the best bakery in Manchester - not once you get a look at those fresh loaves, or fancy pastries, or stuffed maritozzo buns. š¤¤
This place has been going strong for a decade, and although they have a fabulous bakery and cafe in the Northern Quarter now, the soul of Companio remains here in Ancoats.
Their original bakery on Radium Street has recently undergone a bit of a refurb, with more space for eating in and shelves packed with both baked goods and other produce.
If you get there fast, you can sink your teeth into their special lemon meringue danish. š

We have teamed up again with our amazing neighbour @formlifestylestore to host a market at our bakery this Thursday and invite some of the brilliant independent makers to sell their products, all made by their hands at the market š«¶š½

Been meaning to write about Rhubarb since the forced rhubarb is in season in the UK currently. If you are wondering how much we love rhubarb in our bakery? I mean look at the wonderful range of products the pastry team have made this year so far and the first photo says it all! @amypastrymelon has it even tattooed on her arm!
The product we make with rhubarb are
Rhubarb compote and toasted milk powder custard danish
Rhubarb and vanilla Pain Suisse
and Rhubarb & Apple jam and Vanilla swirl
What also becomes a point of discussion at the bakery is the Rhubarb that grows in different parts of the world, how different it looks in colour but it tastes exactly the same.
Rhubarb in Middle East or what we call in Assyrian language ÜÜ”ÜÜØÜøÜ grows in the wild, gets harvested usually by shepherds in spring and sold by the roads in mountains or in the villages. It is consumed raw as a snack, some people even dunk it in salt for extra savoury flavour.
The last few slides show the wild rhubarb that grows in Iraq and how it is harvested and sold.
Every time I see a baker preparing rhubarb at our bakery, I walk and take a piece of rhubarb and munch on it, everyone winces but I still havenāt convinced any of them to join my team of tart rhubarb š but will keep trying!
